I love this quick and easy beet salad recipe that is ready in just 5 minutes. Make this recipe at home with a few simple ingredients. The base salad ingredients are vegan, plant-based, and gluten-free. It is suitable for anyone with Celiac disease, who follows a gluten-free diet, is lactose intolerant, is vegan or simply wants to cut down on animal products.

Ingredients and Substitutes
Load your salad plate filled with delicious fresh vegetables. In terms of my diet, I always think of adding more leafy greens and texture to complete my meals. The "abundance mentality" has really helped me enjoy my food more!
Beetroot Vegetable - opt for either golden beets or red beets. Both types of beets are delicious when baked fork tender.
Turnip Radish - these small crimson skin turnips with white flesh are delish and peppery. It adds a pop of zing to salads.
Figs - Fresh figs are milder in sweetness compared to dried figs. Both are delicious and add an elegant note to the salad.
Tomatoes - any type of tomatoes will do. We love heirloom tomatoes, Roma tomatoes or cherry tomatoes. Cherry tomatoes are brighter and zippier.
Arugula - This leafy vegetable is part of the Brassicaceae family with fresh, bitter and peppery flavours. This cruciferous vegetable, a cousin of broccoli and kale is the perfect canvas for other ingredients with a more robust flavour profile.
Homemade Balsamic Vinaigrette - This delicious homemade vinaigrette comes together in 5 minutes, so skip the store-bought salad dressings! For THIS recipe, you just need simple ingredients like balsamic vinegar, fresh garlic clove, and extra virgin olive oil.
Sea Salt - a pinch of salt to taste.
Maple Syrup - drizzle a little sweetness to enhance the flavour of this salad. Maple Syrup is vegan, while Honey is not.

The easiest way to prepare this salad is to meal prep ahead of time.
Vegetables can be shredded, washed in advance and stored in the refrigerator in an airtight container for up to 3 days.
The Homemade Balsamic Vinaigrette Salad Dressing can also be made in advance the night before.
How To Roast Beets Easy
Roasted beets have an earthy sweetness that is perfect for salads. Use the quick and easy method to roast beets - no peeling is required.
Pre-heat oven to 375F.
Wash and pat dry beets with a kitchen paper towel.
Slice the beet tops off. Cut the beets in half if your beets are too big.
Add beets, olive oil, and a pinch of sea salt in a large bowl. Toss beets and evenly coat.
Layer beets on a baking sheet lined with parchment paper or aluminum foil. Add ¼ inch of water to the pan.
Place beets into the oven and roast for approximately 45 minutes or until the beets are fork tender.
Remove from oven and let rest.
Once the beets cool to room temperature, place the beets under cold running water and slide the peels off.
Pro Tip: Wear kitchen gloves to avoid staining your hands with beet juice.
Using a sharp knife, quarter beets into wedges and place them into a large mixing bowl.
Add lemon juice, a pinch of sea salt and extra virgin olive oil. Reserve.
Storing Beets
Roasted beets can be kept frozen in the freezer. Cube them to the desired size and pack them into a reusable food storage silicone bag. They will stay fresh for several months.
