Selecting Summer Vegetables
Summer is the height of the growing season, and it is hard to beat the taste of fresh in-season vegetables. Adding vibrant vegetables to your salad is delicious and appealing to your senses.
We used garden ripe cherry tomatoes, baby cucumbers, and shallots (red onions work equally well). Season it with fresh thyme herbs, parsley, cilantro and salt and pepper to taste.
Serve as a simple side salad or on its own, topped with your choice of protein.

Simply place a tea towel under a large mixing bowl and another clean tea towel inside the bowl. Now place the bottom end of the corn right in the bowl, standing vertically. Using a sharp paring knife, slice downwards, and you will see all the corn kernels fall right into the bowl.

- 2 ears fresh corn on the cob, husks and silks removed, ends trimmed
- 100 g cherry tomatoes, halved
- 1 shallot, rough chop,
- 2 baby cucumbers, cubed
- ¼ tsp fresh thyme herbs
- 50 g fresh parsley, rough chop
- 50 g fresh cilantro, rough chop
- 2 teaspoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon celery salt
- salt and pepper to taste
Cooking Corn in the Air Fryer
- Preheat the air fryer to 400F.
- Remove the husks and the silks from the corn on the cob. Trim the ends if required.
- Brush or rub olive oil on the corn evenly.
- Mix all the dry seasoning ingredients together and sprinkle evenly over the corn.
- Add the corn in a single layer in the air fryer basket.
- Set the air fryer to 400F for 15 minutes, flipping halfway and checking in at the 10-minute mark.
- Carefully remove the corn from the air fryer.
- Once the corn has cooled down, remove the kernel from the cob.
