Cooking Corn in the air fryer is one of the simplest ways to indulge in Summer's sweet local corn on the cob. It is fantastic when you want some grilled corn but doesn't want to go throw the hassle of BBQing just for that! And when you have a couple of extra corn on the cob, you can make this delicious quick and easy Air Fryer Corn Summer Salad! We always make extra!

Ingredients

  • 2 ears fresh corn on the cob, husks and silks removed, ends trimmed
  • 100 g cherry tomatoes, halved
  • 1 shallot, rough chop,
  • 2 baby cucumbers, cubed
  • 1/4 tsp fresh thyme herbs
  • 50 g fresh parsley, rough chop
  • 50 g fresh cilantro, rough chop
  • 2 teaspoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon celery salt
  • salt and pepper to taste

Instructions

Cooking Corn in the Air Fryer

  1. Preheat the air fryer to 400F.
  2. Remove the husks and the silks from the corn on the cob. Trim the ends if required.
  3. Brush or rub olive oil on the corn evenly.
  4. Mix all the dry seasoning ingredients together and sprinkle evenly over the corn.
  5. Add the corn in a single layer in the air fryer basket.
  6. Set the air fryer to 400F for 15 minutes, flipping halfway and checking in at the 10-minute mark.
  7. Carefully remove the corn from the air fryer.
  8. Once the corn has cooled down, remove the kernel from the cob.

 

Local Corn Salad

  1. While the corn is cooking, wash and prepare the vegetables and herbs.
  2. In a large mixing bowl, add vegetables, herbs, olive oil, and seasoning.
  3. Mix well.
  4. Top with your choice of protein. (optional)
  5. Serve and enjoy.

Notes

  1. This recipe was made in a Ninja Foodi Air Fryer.
  2. For even cooking, don’t overcrowd the air fryer. Arrange the corn in a single layer.
  3. Preheat the air fryer for a more even cooking heat distribution.
