Like another famous Chinese Carrot and Green Radish Soup served in Chinese restaurants and Cantonese households, this carrot vegetable soup recipe is flavourful soothing and moisturizes the lungs.
Carrots (紅蘿蔔, Hóng luóbo) - This Vitamin C rich root vegetable not only improves immunity but also improves eye fatigue, anemia and lowers blood pressure, improves metabolism and strengthens liver and stomach functions. Enjoy this absolutely delicious blistered carrot side dish in just 20 minutes.
Sweet Corn (粟米, Sùmǐ) - Fresh local corn nourishes Yin and blood. Corn helps clear heat, quench thirst, strengthens the stomach, harmonizes the stomach and calms the mind. Don't throw the corn silk (玉米絲, Yùmǐ sī) away. Corn silks enter the kidney, bladder, and gall bladder meridians and can treat hypertension, gout, and edema, soften masses and restore essence.

Chinese Almonds (南杏北杏, Nánxìng Běixìng) - 南北杏 Apricot kernel reduces phlegm, moistens the lungs and relieves cough and asthma. South Apricot Kernels are sweet. Dried Figs (無花果, Wúhuāguǒ) - Dried figs are sweet in taste and cool in nature. They belong to the lungs, stomach, and large intestine meridians. Figs are used to clear heat, quench thirst, promote the secretion of body fluids, moisten and tonify the stomach and large intestines, detox, and reduce inflammation.
Black Eye Peas (眉豆 Méi dòu) - The leguminous plant kidney bean seed provides high-quality protein eggs that are easy to digest and absorb. It has appropriate carbohydrates and various vitamins, such as Vitamin B1. Vitamin B1 is responsible for maintaining the function of normal digestive gland secretion and gastrointestinal motility, helping digestion and increasing appetite. Mei Dou treats heat-dampness, vomiting, diarrhea, and spleen deficiency and is an ideal food for diabetics.
Chicken Drumsticks - skinless chicken legs are an excellent addition to Chinese soup stock. Chicken meat or chicken carcass enhances the flavour of a large pot of herbal soup.
Ingredients and Substitutes
This is one of the easy, hearty soups to make year round especially during Spring time. Growing up in a Cantonese family, this pork and chicken broth is a great way to bank extra nutrients.

- Pork Ribs or Pork Bones
- Chinese Almonds
- Raw Coix Seeds
- Dried Figs
Option Ingredients
- Black Eye Peas
- Chicken Leg or chicken breast - opt for chicken without skin. They are less fatty.
- Chinese Honey Dates
Most dry goods ingredients, tools and supplies can be purchased at your local Asian markets and Chinese grocery stores or Amazon Online.
Instructions
Soak the herbs for 5-10 minutes in a small bowl to remove traces of impurities. This will help remove dust and debris. Rinse and set aside in a small bowl.
Wash and pat dry vegetables. Cut the vegetables into chunky thick or round pieces, approximately 2 inches.
Wash the pork ribs, pork shank or tenderloin with cold water and pat dry with a kitchen paper towel. It is only necessary to cut the pork ribs into small pieces if your pot needs to be bigger.
Wash chicken legs and pat dry with kitchen towel.
Blanched chicken legs and pork ribs in a medium pot to remove the impurities and excess foam. Rinse with cold water. Set aside.
To make the pork rib soup, add the sliced vegetables, pork bones and herbal ingredients into a clean, large soup pot not made of stainless steel like THIS Ceramic Pot or a Buydeem Health Beverage Maker.
Although not all Chinese herbs react with metal, it is best not to use a metal pot when making Chinese medicinal herbal soups.
Fill a large pot with enough water to cover to make the clear soup stock. We used approximately 4 litres of cold water.
Boil at high heat for 30 minutes, then reduce to low heat. Continue with a slow, gentle simmer for 60 minutes on low heat.
If you find your pot of soup is low in liquid, where most of the liquid has evaporated, add a bit of boiled hot water to the soup and continue cooking.
Salt to taste.
Serve and enjoy.
