What is Char Siu?
Char Siu / Char Siew (叉燒, cha shao) is Chinese Cantonese roast meat. The name means "fork roasted" in Cantonese, referring to how cooks traditionally skewered pork on long forks over a fire or in specialized ovens.
This barbecue pork (cha1 shao1 in Mandarin, sometimes spelled "cha siu") literally means "forked roasted." The term Char Siu references the traditional cooking method of barbecue pork.
Walk into any BBQ Master shop (燒臘店) in Chinatown and you'll see whole slabs hanging in the window. You can order it three ways: lean meat, fatty cuts, or half-and-half. The signature? That sticky-sweet glaze with charred edges.
What Cuts of Pork Do You Use For BBQ Pork?
When choosing which cut of pork works best, pork shoulder or pork butt gives you the best results. I prefer Boston butt because it has beautiful fat marbling throughout. This marbling keeps the meat tender and juicy during cooking.
Lean pork loin works if you want less fat, but it won't be as succulent. Pork tenderloin is another lean option that cooks even faster.
Boston butt comes from above the shoulder blades. The fat melts during cooking, basting the meat from the inside out. Your air fryer circulates hot air around every surface, creating an even char without drying out the center. Total time? Under 30 minutes, not including marinating.
Traditional oven methods take twice as long. The air fryer method cuts that time in half while delivering the same caramelized exterior.
Making Char Siu at home in an air fryer is quick, easy and mess-free. Instead of slow roasting pork shoulder, air frying pork tenderloin or pork shoulder or pork butt take a fraction of the time compared to conventional oven. In less than 30 minutes (not including marinating time), the air fryer air circulation guarantees an even char without drying out the center.

Char Siu for Lunar New Year
This air fryer char siu is perfect for Chinese New Year celebrations. The red colour symbolizes good fortune and happiness, making it a traditional choice for holiday feasts. Families serve char siu during reunion dinners because the sweet glaze represents a sweet year ahead.
Prep ahead during the holiday rush. Marinate the pork two days before New Year's Eve. On the day of your feast, air fry it fresh in just 30 minutes while you're finishing other dishes. The kitchen stays cooler than running your oven for hours, which matters when you're already cooking a dozen other recipes.
Char siu works for the entire Spring Festival period, not just New Year's Day. Make a big batch and use leftovers throughout the 15-day celebration. Toss it into fried rice for breakfast, add it to longevity noodles for birthdays, or stuff it into bao for impromptu guests.
Timing tips for holiday cooking: Start marinating on the 28th or 29th day of the lunar month. Cook fresh on New Year's Eve or New Year's Day morning. The smell of caramelizing honey and char siu sauce fills your home with that festive BBQ shop aroma everyone associates with celebration.
Serve your char siu alongside other auspicious dishes like whole steamed fish (for abundance), Buddha's delight (for good fortune), and dumplings (for wealth). The combination of red char siu, green vegetables, and golden fried foods covers all the lucky colours.
Year of the Horse 2026 (February 17)? Doesn't matter. This recipe works every year and freezes beautifully if you make extra batches for the entire festival season.
How To Prepare The Pork For Air Fryer Pork Shoulder?
Wash and pat the meat dry with paper towels. Trim excess fat if you want. Remove bones if your cut has them.
Cut the pork into strips 2 to 3 inches long and about 1.5 inches thick. This size fits most air fryer baskets and cooks evenly.

Ingredients and Substitute
Air fryer Char Siu recipe barbecued to perfection requires just a few simple ingredients, but the results are satisfying. It is the perfect addition to any meal! Here's what you will need to make Air Fryer Chinese BBQ Pork.
Pork - Pork shoulder or pork butt for marbled meat. Pork tenderloin if you want lean.
Cooking Spray - One or two tablespoons of neutral oil prevents sticking.
Char Siu Sauce - make your own char siu sauce recipe or shortcut your way with Lee Kum Kee Char Siu Sauce (find it at Asian markets or online).
Honey - glaze your pork with honey. Honey adds extra sweetness and helps char the surface.
Most dry goods ingredients, tools, and supplies can be purchased at local Asian markets, Chinese grocery stores, or Amazon Online. Amazon Prime members receive free shipping and faster delivery times.
Instructions - How to Make Char Siu In Air Fryer
This air fryer char siu takes three simple steps: marinate, cook, and glaze. The marinade does most of the work overnight. Pop the pork in your air fryer for 20 minutes, baste with honey for that sticky finish, and you're done. No special skills needed. Just follow the process and you'll get restaurant-quality Chinese BBQ pork every time.
Traditional Char Siu Sauce From Scratch
Want to make your own? Mix light soy sauce, dark soy sauce, brown sugar, fermented soybean paste, honey, malt syrup, Shaoxing wine, hoisin sauce (or substitute oyster sauce), minced garlic, and sea salt.
The red colour comes from fermented red bean curd, not food colouring. Skip the five-spice powder and sesame oil - they're not traditional.
I've tested both homemade and Lee Kum Kee. Honestly? The bottled sauce tastes fantastic and saves time. I reach for it every time now.
Lee Kum Kee Char Siu air fryer recipe is too easy!
How To Marinate Char Siu BBQ Pork
Add ½ cup of char siu sauce to a gallon ziplock bag. Toss in your cut pork strips. Seal the bag, squeezing out as much air as possible.
Massage the sauce into the meat through the bag. Every piece should be coated.
Refrigerate for at least 4 hours. Overnight marinating works best - the flavours penetrate deeper, and the meat stays juicier.
Cantonese BBQ Pork Air Frying Instructions
Preheat your air fryer to 400°F.
Place the marinated pork in the basket. Baste each piece with 2 tablespoons of char siu sauce. Spray with cooking oil. Air fry for 8 minutes.
Flip the pork over. Baste again with sauce and spray oil. Air fry another 8 minutes.
Your char siu is technically done now. But here's my secret step: baste each piece with 2 teaspoons of honey. Air fry for 2 more minutes at 400°F. Flip, baste the other side with honey, and air fry 2 final minutes.
This honey glaze caramelizes beautifully and adds that signature sheen.
Remove with kitchen tongs. Let rest for a few minutes before slicing.
Total cooking time: about 30 minutes (20 minutes for basic char, plus optional honey glazing).
Different air fryer models vary. Adjust time by 1-2 minutes if needed. Test doneness by slicing one piece. The meat should be cooked through with slight pink char on edges.

What Can You Do With Leftover Marinade?
Save that honey-sauce mixture. Brush it on grilled pork belly for Korean-style lettuce wraps. The sticky-sweet flavour works with any grilled meat. Not just for Chinese BBQ pork air fryer recipe!
How Do You Reheat Char Siu?
Wrap leftover BBQ pork in foil to prevent burning. Bake at 375°F for 10-12 minutes until heated through.
What To Make With Leftover Char Siu
Slice the pork over white rice. That's my favorite simple meal.
Make char siu bao (steamed BBQ pork buns). Add it to noodle soups with bok choy and scallions. Toss chunks into fried rice with eggs and vegetables.
Best Air Fryer Tips
- Best temperature: 400°F mimics the high heat of a roaster. Don't worry, the pork stays tender with perfect char.
- Cooking time: 20 minutes total for most cuts. Thicker pieces need an extra 1-2 minutes. Your air fryer model matters, so check doneness.
- Preheat? Always. Preheating ensures even cooking. Run your air fryer empty for 2-3 minutes before adding food.
- Choosing an air fryer: Consider your batch size. We use a 7.6L model that fits a small chicken or large broccoli head. Bigger baskets mean fewer batches.
- Easy cleanup: Line the basket with air fryer parchment paper. Toss the paper after cooking, then wash the basket with warm, soapy water.
Frequently Asked Questions (FAQs)
Common Questions About Air Fryer Char Siu
Got questions about making air fryer char siu? You're not alone. Here are the answers to what home cooks ask most about this Chinese BBQ pork recipe, from choosing the right cut to storing leftovers.
It is best to air fry Char Siu at 400F to mimic the high heat temperature of a roaster. Don't worry! Your bbq pork will still be tender with just the right about of char.
Depending on the size and the thickness of your pork you put into the air fryer, 20 minutes should cook it thoroughly with a beautiful char. This also depends on the model of your air fryer, so you may want to reduce or increase the air frying time by one to two minutes.
Based on experience, you should always preheat the air fryer before filling it with food. By doing this, the air fryer's temperature is more consistent, and your food will cook more evenly. Simply preheat your air fryer for two to three minutes before cooking.
Choosing the right air fryer for your kitchen depends on your lifestyle, available counter space, and if you intend to cook small or big batch meals. For us, we like the supersized XL pressure cooker and 7.6L cooking pot that is big enough to cook a small chicken or one large broccoli inside like THIS air fryer!
Use air fryer parchment paper and line the bottom of the pan for easy clean ups. Then wash the air fryer basket with warm soapy water.
Yes, but it won't be as juicy. Pork tenderloin is lean, so it dries out faster. If you're using it, reduce cooking time to 12-14 minutes total and check the internal temperature at 145°F. Pork shoulder or pork butt gives you better results because the fat keeps everything moist.
Four hours minimum works, but overnight is better. The longer marination lets the char siu sauce penetrate deeper into the meat. Don't go past 24 hours, though, because the texture gets too soft and the red colour from fermented bean curd seeps all the way through.
You can, but don't. Those final 4 minutes with honey create that signature sticky, caramelized exterior. It's what makes char siu look and taste like the stuff hanging in Chinatown windows. Without it, you've just got basic barbecue pork.
Make your own with light soy sauce, dark soy sauce, hoisin sauce, brown sugar, honey, Shaoxing wine, fermented red bean curd, and garlic. Mix everything together, and you're set. Hoisin sauce alone works in a pinch, though the flavour won't be as complex.
Slice into the thickest piece. The meat should be cooked through with a slight pink tinge near the charred edges; that's normal. Internal temperature should hit 145°F. If it's still raw in the center, air fry another 2-3 minutes.
Sure. Use your oven at 400°F. Place the pork on a wire rack over a baking sheet and roast for 40-50 minutes, flipping and basting every 10 minutes. The air fryer just cuts the time in half and makes cleanup easier.
Three to four days in the fridge, stored in an airtight container. Reheat wrapped in foil at 375°F for 10-12 minutes, or toss it straight into fried rice or noodle soups. It freezes well for up to 3 months too.
Your air fryer might be running cooler than the dial says. Bump the temperature to 425°F for the final honey glaze step. Also make sure you're not overcrowding the basket-pieces need space for air to circulate and create those charred edges.
Yes, but you'll need to cook in batches. Overcrowding the air fryer basket steams the pork instead of roasting it. Keep finished batches warm by wrapping them in foil while you cook the rest. The marinade scales up easily.
That's the fermented tofu itself, sitting in its brine. Mash it with a fork before mixing it into your marinade, so it blends smoothly. It gives char siu that deep umami flavour and natural red colour. You'll find it in jars at Asian markets, usually near the sauces.

Char siu is one of those things I've wanted to try for so long, but I've always been a little intimidated. It doesn't hurt that it's fairly easy to get good takeout char siu here too, lol. But air fryer stuff is something I'm really getting into, so this is perfect! Hoping to perfect my own take on it. Cheers.
Nancy says
Hey Sean - there's something truly satisfying about being able to make homemade char siu even tho it is so handy to get in Vancouver for take out! I won't lie, I kind don't want to pay for it anymore!

Do you know a method to avoid charring the food? To me, it is a bit of a deterrent in using the air fryer a lot. I was thinking to cover the food with foil, but it might fly during the process. If you have a tip that works, please let me know, thanks! Just trying to avoid ingesting acrylamides which lead to cancer.
Nancy says
You can most definitely wrap it in tin foil if you please or simply not air fry it to the point of charring. But the whole point of charring is to maintain the classic integrity of the BBQ pork in traditional Chinese recipes. Or you can simply cut off the charred parts after it is fully cooked. You do you! 🙂

Love that crusty skin and how juicy it is!
Nancy says
It's the best part! I always ask for the charred edges 🙂
