Ginger - Add a few pieces of sliced ginger to enhance the flavour and remove the gaminess from the chicken.
Green Onions - finely chopped spring onions for garnish.
Chicken Marinade Ingredients
- Light Soy Sauce
- Dark Soy Sauce
- Shaoxing Wine (Chinese Rice Cooking Wine)
- Sesame Oil
- Brown Sugar
- Corn Starch
- Ground White Pepper
- Kosher Salt - A dash of salt to taste.
Shiitake Mushroom Marinade Ingredients
- Light Soy Sauce
- Dark Soy Sauce
- Shaoxing Wine (Chinese Rice Cooking Wine)
- Sesame Oil
- Brown Sugar
- Corn Starch
- Vegetable Cooking Oil
Optional Ingredients
- Black Fungus (wood ear mushrooms)
- Chinese Sausages
- Lily flowers

Instructions
By far, steaming is the easiest method to make Authentic Steamed Chicken With Chinese Mushrooms! This crowd-favourite Cantonese chicken recipe is deliciously succulent, tender and bursts with pure chicken flavour!
There are just a few simple steps in the cooking process. I guarantee you will nail making the juiciest chicken ever if you follow our step-by-step instructions!
Use coarse salt and give the chicken parts a good scrub.
Wash, trim, and dry the fresh chicken with kitchen paper towels.
Cut the boneless, skinless chicken thighs into smaller pieces on a heavy chopping board. Aim for bite-sized chicken pieces. Set aside.
In a large bowl, add chicken marinade ingredients. Mix well. Add sliced chicken. Mix well. Let marinade in the refrigerator for at least 20 mins.
Liberally squeeze excess water from the soak shiitake mushrooms in cold water. You can learn how to quickly prepare dried Chinese Mushrooms. Do not discard the soaking liquid from the resuscitated shiitake mushrooms. Save it to make noodle soup! It adds an instant umami!
Thinly slice the Chinese mushrooms. I like to leave a few mushrooms whole as well.
Add Shiitake mushrooms, marinade and a tablespoon of vegetable oil. Mix well. Let marinade in the refrigerator for at least 20 mins.
Wash 2 cups of white jasmine rice and add to your rice cooker. Add water per rice cooker instructions. Typically, add enough cold water, approximately 1 cm over covered rice.
Add the chicken mixture and marinated shiitake mushrooms in a single layer to a steaming plate.
There are three ways to steam this delicious steamed chicken with Chinese mushrooms recipe.
Method One: The traditional way, Chinese people steam this chicken pie dish by placing a trivet rack in the wok to raise the steaming tray and bring water to a boil on high heat for 22-25 mins.
Method Two: Cooking this one-pot steamed chicken recipe in the rice cooker. Rice cooker chicken rice is my favourite lazy people cooking method. Place the chicken and mushrooms on a deep plate in your rice cooker on a trivet rack. Set to "cook rice" mode. The juicy steamed chicken is also ready once your rice cooker finishes cooking the rice. Approximately 30 mins.
Method Three: Alternatively, for convenience, I prefer to steam in my Cuisinart steam convection oven for 25 minutes at Super Steam 400F.
Insert an instant-read thermometer at the thickest part of the chicken and check that the internal temperature of the chicken is at least 165F.
Serve and enjoy hot!
