Ingredients and Substitutes
Air fryer corn ribs are quick and versatile. Simple ingredients and easy seasoning make them irresistible! This naturally vegan appetizer meets all dietary lifestyles. Whether vegan, vegetarian, gluten-free or dairy-free, air-fried corn riblets are a dietary-inclusive snack!
Corn on the cob - Fresh sweet corn is the epitome of summer! Local corn tastes the sweetest, and the plump corn kernels make the best Summer Corn Salad! Opt for freshly picked corn at your local farmer's market. Some grocery stores will shuck and clean them for you!
Miso Paste - Miso is a traditional Japanese cuisine seasoning made with fermented soybeans, salt and seaweed. This plant-based, high-protein paste adds a salty, umami flavour to many dishes.
Butter or Vegan Butter - We like Flora Butter Plant-Based Bricks for a perfect 1:1 swap for butter in any recipe.
Real Maple Syrup - Pure maple syrup is 100% vegan and a great alternative to honey, sugar and artificial sweeteners. We love the complex flavour profile of caramel, vanilla and prune that make this vegan-friendly sugar replacer. Maple syrup sugar crystals are also excellent to keep in the pantry.
Shichimi Togarashi - One of my Japanese spicy seasonings with an assortment of dried chili powder, red chili pepper, orange peel, sesame seeds, Japanese pepper, ginger and seaweed. Add this flavorful seasoning to your noodle soup dishes or any other dish that needs an extra flavour.
Vegetable Oil - Use Olive Oil, Avocado Oil or Cooking Oil Spray to gently coat the corn ribs for air frying.
Most dry goods ingredients, tools and supplies can be purchased at your local Asian grocery store or online at my Amazon Store. I have linked the products for your convenience!
Variations and Different Flavors
Feel free to change up the seasoning aside from using Shichimi Togarashi. Garlic Powder, Salt and Black Pepper, lemon pepper seasoning, smoky rub or bbq spice rub, and Vegan cheese with nutritional yeast are great options.
Serve it with a side of siracha mayo, chipotle mayo, ranch dressing and cashew vegan mayo really bring out the sweet and juicy corn kernels!
Instructions
Easiest Way To Cut Corn Riblets Off Whole Ear Of Corn
First shuck and remove corn silks off the ears of corn.
Method 1: Large Sharp Knife
Use a very sharp knife, and cut the widest end of the bottom stalk off on a heavy duty chopping board.
Cut the whole corn cob into half cobs.
Stand the corn upright on the flat side and cut each crosswise down the middle with a sturdy knife.
Repeat the process, lay the two corn halves on the cutting board, and cut them into quarters.
Method 2: Scissors
Another method to dissect whole corn on the cob into corn pieces is with a pair of sharp kitchen scissors. This simple trick should make it easier to avoid using large sharp knives.
Insert the tip of the kitchen shears into the center of the corn on the cob. Press the scissors into the cob and twist at the same time.
The central core of an ear of corn will break apart into corn pieces.
Miso Butter Mixture
Add miso paste, plant-based butter, real maple syrup, Shichimi Togarashi seasoning to a small bowl. Mix well until combined.
For best results, use room-temperature butter. Cut the butter sticks into thin slices or chunks instead of leaving them in one big stick. This will soften the butter faster.
Assembly & Air Fry
Use a pastry brush, the back of the knife, or a spoon to apply the spicy miso butter mixture onto the pieces of corn ribs. Ensure the slices of corn are evenly coated.
Preheat air fryer to 400°F.
Pro Tip: Use air fryer parchment paper and line the bottom of the air fryer basket for easy clean-ups.
Place buttered pieces of corn ribs in a single layer in the air fryer basket.
Set the cooking time to 12 minutes at 400F. Flipping halfway.
Adjust the air frying time to 8-10 minutes for half size shorter ribs.
Air fry until the corn riblets are golden brown with nice and crispy edges that are a little charred.
Let rest for a few minutes.
The hardest part of this recipe is resisting not eating them straight from the air fryer. They are extremely hot!
Store in an airtight container for a few days, but it is hard to imagine that this air fryer corn riblets recipe won't be devoured immediately!
To reheat and crisp corn ribs back up, air fry at 360F for 3-4 minutes.
