What Does Au Gratin Mean In Cooking?
In culinary arts, the term au gratin is any baked golden brown dish with seasoned breadcrumbs or cheese topped.
Potatoes au Gratin is an elegant side dish prepared in the au gratin style with layers of thinly sliced potatoes and finished by a quick broil in the oven. These wholesome, vegan dauphinoise potatoes are my personal favourite and a crowd-pleaser!
Gluten Free, Dairy Free Scalloped Potatoes
Easy, simple casseroles are not hard to make. Comfort food like this is satisfying. We updated this homemade gluten-free, vegan gratin potatoes recipe by substituting oat milk for heavy cream and an Everything Bagel Dip from Mother Raw for the "roux". You don't even need to substitute all purpose flour for gluten-free flour!
We love Mother Raw's lineup of organic dairy-free salad dressings and dips that are gluten-free, nut-free, soy-free and made in Canada. Consider the Roasted Garlic Dip if sesame, poppy seeds, Garlic, and onion flavours are not drool-worthy for your taste buds.
Can you make scalloped potatoes with oat milk? Yes! Oat milk mashed potatoes are so velvety and creamy! We like to add oat milk to thin out the no cook "bechamel sauce" dip.

Ingredients and Substitutes
Potatoes - creamy vegan potato au gratin centers around this humble ingredient, potatoes. The best potatoes for an amazing potato bake are russet potatoes. Russet potatoes are starchy and therefore make the creamiest sauce. (they are fantastic for making dairy free mashed potatoes.) Feel free to experiment with Yukon gold potatoes, red potatoes and even sweet potatoes. Potato lovers, be sure to make this delicious creamy vegan potato soup or this vegan pierogi.
Oat Milk - This neutral-tasting plant-based milk alternative has the perfect viscosity to make a nut-free creamy sauce. Cashew or unsweetened almond milk is also an excellent substitute for whole milk.
Everything Bagel Dip - This guilt-free organic dip contains wholesome, simple ingredients with just the right amount of creamy, scrumptious goodness. A few tablespoons of this dip provides enough seasoning of onion, sea salt, and minced Garlic. This cold blended dip can be found in the refrigerator section of your local grocery stores.
Sugar - Feel to use either brown sugar or sugar alternatives like monk fruit sugar to balance the savoury flavour profile of this vegan cream dauphinoise potato dish.
Vegan Cheese - Sprinkle some plant-based dairy-free cheese just before popping the sliced potatoes in the broiler. We like Daiya Food's cheddar style shreds that melt, stretch, and have a traditional dairy cheese taste and texture!
Everything Bagel Seasoning - garnish by dusting some Everything Bagel Seasoning on top of the baked bubbly creamy cheesy potatoes. Everyone raves about Trader Joe's Everything but The Bagel Sesame Seasoning Blend.
Fresh Garlic - I love creamy garlic potatoes, so I would add a few extra minced garlic cloves. Garlic powder is a good alternative.
Salt and Black Pepper - To Taste

Instructions
This plant-based scalloped potato recipe with cheese is so quick and easy to make that you do not need to make it ahead of time (even during the holiday dinner season)!
Preheat oven to 400F.
Wash and scrub your potatoes. Peel if desired.
Thinly slice the potatoes. Set aside
If you want to avoid cutting potatoes by hand for a long time, you can also use a good-quality food processor. Here are my picks for the Best Food Processors!
Alternatively, you can get the job done by using a mandoline slicer.
I like evenly sliced potatoes for a uniform presentation in the baking dish.
Prepare the cream sauce in the Anyday Large Shallow Dish or a microwave-safe baking dish with a lid.
Add oat milk, Everything Bagel Dip, minced garlic, sugar, salt and pepper into the large bowl. Mix well.
Place the Anyday Dish into the microwave with the lid and knob lifted.
Cook in the microwave for 1.5 minutes.
Carefully remove the bowl from the microwave and remove the lid. Give the cream sauce a good stir.
Add potato slices to the bowl and evenly coat with cream sauce. Arrange in a single layer across the bottom of the bowl.
Return to the microwave and cook uncovered for 6 minutes or until potatoes are fork tender.
Carefully remove the bowl from the microwave and top it with vegan shredded cheese.
Pop the microwave scalloped potatoes with the addition of cheese shreds in the oven. Set to broil at 500F for 3-5 minutes or until golden brown and creamy cheese sauce is bubbly!
Serve and enjoy hot!
Tips and Tricks
- Bake scalloped potatoes ahead of time and reheat them in the broiler. Store pre-cooked potatoes covered with aluminum foil in a baking dish, in an airtight container or in the Anyday Shallow Dish with the lid covered and refrigerate.
- Cheesy potato casserole can be stored for up to 3 days in the refrigerator or 3 months in the freezer.
- Evenly slice potatoes with equal thickness so they will cook evenly.
- If baking from frozen, ensure that you have thawed the dish thoroughly, or the center will be cold.
- Topping these delicious potatoes with cheeses like gruyere cheese, gouda cheese, or parmesan cheese. Experiment with any variety or a combination of cheeses to find your favourite cheesy flavor.
- I love a good second layer with lots of sharp cheddar cheese. It makes the creamy au gratin potatoes more decadent.
- There are a lot of plant-based vegan cheese alternatives in the market.
- Nutritional yeast is a great dairy-free option for sprinkling parmesan cheese.

- 4 tbsp Everything Bagel Dip (Mother Raw)
- 100ml Oat Milk (We like using Oatly Barista or Earth's Own Barista)
- 2 tsp Monk Fruit Sugar
- 1 tsp Thyme
- 3 Garlic Cloves, minced
- Salt and Pepper to Taste
Instructions
