Where to buy snow fungus and other Chinese herbs? You can find snow fungus and these pantry herbs at most Asian grocery supermarkets or your local Chinese herbalist.
Snow Fungus (Tremella Fuciformis) 雪耳
This dried fungus is inherently sweet in taste and helps to tonifies Yin deficiencies. Silver Ear Fungus promotes meridian affinity by moistening the stomach, kidney and lungs.
In beauty, Tremella Fuciformis enhances skin hydration and rejuvenation. Snow Ear Fungus has anti-aging properties and antioxidant effects that prevent cell damage by free radicals. This is a very safe ingredient and can be eaten freely as food.
Tremella is neutral in nature, sweet and light in taste. It also has the effect of nourishing Qi and improving blood flow.
This ingredient has many beauty benefits for improving skin tone, good skin rejuvenation and replenishing the spleen, as do white ingredients in TCM Chinese cuisine.
For Vegan recipes, Snow Fungus is rich in plant collagen content, making it an excellent bird nest and meat substitution. Its gel-like properties increase the creaminess of the texture of the soup.

South/North Apricot Kernels 南北杏
Apricot kernel reduces phlegm, moistens the lungs and relieves cough and asthma. Sweet almonds need to be consumed in moderation, as too much can easily lead to poisoning if ingested on unprepared ones with skin. South Apricot Kernels are sweet. North Apricot Kernels are slightly bitter.

Papaya 木瓜
The sweetness of the papaya is soothing. Papaya's health benefits include strengthening the spleen and stomach, helping digestion, clearing the heat, quenching thirst, and lowering blood pressure.
Papayas have an excellent source of Vitamin C, A and B-complex source and contain large amounts of soluble dietary fibre.
There are two papaya varieties unripe green papaya and ripe orange papaya. When making soup, it is recommended that you use unripe papaya and avoid using ripe papaya. Ripe papaya is best enjoyed and eaten as fruit.

Rock Sugar 冰糖

冰糖性平, 補中益氣、和胃潤肺、止咳化痰、祛煩消渴、清熱降濁、養陰生津、止汗解毒等功能。治療中氣不足、肺熱咳嗽、咯痰帶血、陰虛久咳、口燥咽乾、咽喉腫痛、風火牙痛等病症。

How To Cook Snow Fungus Dessert Soup with Papayas.
Wash and rinse Chinese herbs like Chinese almonds and snow fungus (and lotus seeds or goji berries if desired).
Soak the herbs for 20 minutes in a small bowl to remove traces of impurities. This will help remove dust and debris. Rinse and set aside in a small bowl.
Soak snow fungus in a separate bowl. Once the snow fungus has resuscitated, cut the hard ends off with a pair of scissors. Section into small pieces.
Wash papaya, cut the ends off the semi-ripe papaya and cut lengthwise to remove the seeds. It is unnecessary to peel the skin but feel free if you desire.
Cut the papaya chunks into smaller pieces or large chunks, depending on the pot size.
Double Stew Method
I typically double stew my Chinese dessert soup recipes in the Buydeem Health Beverage Maker.
It is easy to use, and I do not need to watch the water boils for long hours of cooking time.
Simply put all the ingredients into the stew pot and fill the main kettle with 1.5 litres of water.
Turn on the stewing "bird nests" function. It is automatically set to 30-minute intervals.
Stovetop Method
If you cooking this dessert over the Stovetop.
Add the main ingredient into a pot of water and boil at high heat. Once the hot water is boiling, reduce heat to low heat and continue cooking for 30 minutes.
Add rock sugar and let dissolve and just your desired level of sweetness.
Enjoy this hot or cold dessert.
Can I Cook Papaya Dessert In The Pressure Cooker?
I do not recommend cooking this Chinese Papaya Dessert in a pressure cooker as it will ruin the stunning colour of the dessert.
Chilled Papaya with Snow Fungus Dessert
If you prefer to enjoy this dessert chilled. Cool papaya dessert soup to room temperature. Place in an airtight container and refrigerate for at least 4 hours.

Ingredients
- 1 lb Ripe Papaya, ends cut and seeds removed 木瓜 1個, 切塊
- ½ Snow Fungus (Tremella Fuciformis), soaked 雪耳 半塊
- 100g Apricot Kernels 南北杏 100克
- 50g Rock Sugar 冰糖 2粒
- 1.5 L water 水
Instructions
