What Is Dalgona Coffee?
The name Dalgona Coffee refers to the fluffy coffee recipe that uses instant coffee, water, and white sugar in a 1:1:1 ratio.
This whipped coffee mixture forms soft peaks after being beaten repeatedly for 10 minutes with an electric hand mixer or 400 times (for exaggeration) if hand whisked.
The South Korean actor Jung II Woo, staring in a reality tv show (Stars' Top Recipe at Fun-Staurant 신상출시 편스토랑), described that this Korean Iced Coffee tasted like Dalgona, a type of Korean Honeycomb Toffee Candy. So hence the name.
Ingredients and Substitutes
Instant Coffee - Instant coffee powder or Instant espresso powder for best results. You can use something other than instant coffee to make Dalgona. It is the gluten in the instant coffee that help forms that whipped, perfect foam.
Freshly brewed espresso also works. Just make sure no additional hot water is added.
Sugar - Brown Sugar or White Granulated Sugar. If may want to use less sugar to make a healthier version of this Dalgona Whipped Coffee, but if you do not keep the same ratio of coffee to water and sugar you will have a hard to nailing the that pillowy, marshmallow like foam. We've seen the end results fail too many times altering that golden ratio.
Hot Water - Hot water is required to melt and dissolve the sugar and instant coffee powder. Cold water will not work. Also, no boiling water is needed if you brew a fresh espresso.
Milk - I prefer neutral-tasting Oat Milk. It is our favorite milk alternative without nuts. However, you can use whole milk or your favourite dairy-free milk substitutes, like almond milk. I am not a fan of soy milk, it gives my coffee a funny taste. Hemp milk is too thin and coconut milk is a little too tropical for my likings. For a thicker consistency, heavy cream works too. But you do you, and use your kind of milk.
Ice Cubes - for that perfectly chilled homemade whipped coffee iced latte, layer the bottom of your cold milk in a tall glass with lots of ice cubes.

This Dalgona Whipped Coffee Recipe uses a few simple ingredients to create a fluffy texture that will become your favourite morning coffee routine!
The key to making a successful Dalgona latte is good dose of patience.
We recommend using an electric hand mixer with whisk attachments for your sanity. It is insane and a waste of time to hand whisk 400 times.
In a small or medium mixing bowl combine 1:1:1 ratio of instant coffee, sugar, and hot water. Combine and dissolve the sugar and coffee granules.
Whisk in high speed for 3-5 minutes or until stiff peaks forms. The coffee will become frothy and color will lighten.
The hot coffee will have cooled down after being whipped.
Add your favorite type of milk to the milk frother. We love our Nespresso Aeroccino! Set the mode to either "hot milk" or "cold milk" depending on if you fancy a hot coffee or an iced milk latte.
Alternatively, you can also use a handheld milk frother to make your milk of choice creamier directly in a mug or cup.
Or skip this step and just pour cold milk to the glass cup.
Add ice cubes to the bottom of a tall glass. Pour your milk from the milk frother into the glass. Remember to leave room at the top for the whipped Dalgona, foamy concoction.
Spoon the beaten coffee foam mixture over milk. Fold into your favourite milk when you are ready to enjoy this delicious coffee recipe.
