No Korean BBQ can be complete without this Korean Green Onion Salad. Some call it Pajeori 파절이, others call it Pamuchim 파무침. Either way, you slice it; you can not have Korean pork belly Samgyupsal Gui 삼겹살 without this marinated scallion salad!

What is Pajeori 파절이? What is Pamuchim 파무침?
Green onions scallions are called pa (파) in Korean. When they are thinly sliced, they are call pachae (파채). Muchim (moo cheem 무침) means to season. It is a broad term for any and every dish prepared in this manner.
Pachae muchim (파채무침) or pamuchim (파무침) or pajeori (파절이), is simply spicy seasoned green onions side dish salad. Another favourite banchan (반찬飯饌) of mine at Korean restaurants.
This Korean spicy green onion salad side dish is goes well with grilled meat or barbecued marinated Korean meat dishes like Bulgogi or Kalbi. The tasty addition of a little acidity and red pepper flakes spices, instantly brightens the flavor of your meat and cuts fat to any heavy meat dish that is greasy.
How To Prepare Thinly Sliced Green Onions
Thinly slice your green onions. I use this special tool. A green onion slice cutter makes the task of shredding a lot of green onions much easier and faster than by hand! Hand cutting scallions with a kitchen knife is not very rewarding. It takes much longer time. Sliced green onions have a slimy surface. It is labour intensive!
Typically we only want the green parts of the green onions.
Place the thinly sliced green onions in a medium bowl of cold water. This ensures the green onions stay crispy and will help remove the sharpness! After soaking in the cold water bath, remove excess water with a salad spinner.
More conveniently, julienned scallions are sold at Korean grocery store. If you are looking for where to buy pa muchim, most Korean supermarkets will also sell this along with other side dishes. But because how easy and cheap it is to make, I prefer to make this myself in the blessed 5 minutes!
How to Season Korean Scallion Salad
A few simple ingredients make up the marinade to this easy Korean green onion Pamuchim Salad. A little acidity, gochujang spice, sesame oil, and light soy sauce is the perfect combination for a flavourful sauce.
Next time you feel like having Korean cuisine, grab a leaf of lettuce, marinated grilled marinated Korean meats like bulgogi, kalbi, or Samgyeopssal pork belly), pa muchim salad and eat it like lettuce wraps. It is the best!
In the summer, I probably make this at least once every week! This simple dish is such a refreshing side dish!

Ingredients
- 5 stalks spring green onion / green scallions, thinly sliced
Pa Muchim Green Onion Vinaigrette
- ½ tsp sugar
- 1 tsp gochukaru (Korean red chili powder), add more for spicier
- 2 tsp sesame oil
- 1 tsp toasted sesame seeds
- 2 tsp light soy sauce
- 2 tsp mirin / rice vinegar
Instructions
- Thinly slice your green onions. I use this tool. A green onion slicer.
- Place the thinly sliced green onions in a bowl of cold water.
- Add remaining ingredients to a small mixing bowl to make Pamuchim Green Onion Vinaigrette.
- Pour Pamuchim Green Onion Vinaigrette over thinly sliced scallions.
- Serve and Enjoy!
