What Is Authentic Chinese Beef Fried Rice 生炒牛肉飯?
The easy beef fried rice is one of my favourite Chinese takeout dishes to order. This appetizing fried rice recipe is packed with leftover rice gently coated with delicious eggs, marinated beef, green onions, sesame oil, and maybe some shredded lettuce. Each bite bursts with flavour.
The traditional method of making this classic Cantonese ground beef rice bowl is to marinate the beef with dark soy sauce, water, salt, baking soda and cornstarch. This is how Chinese restaurants tenderize their beef and eliminate the gamey taste of beef.

How To Make Vegan Minced Beef Fried Rice With Egg Replacer
Vegetarian ground beef fried rice is an easy main dish to make at home with an egg replacer. It is an inexpensive crowd pleasure and a cheap meal prep idea to be added to your weekly meal prep menu.
Choose either plant-based egg powder alternatives or a ready-made liquid egg substitute like Just Egg.
We used Just Egg liquid, and Just Egg folded plant eggs patties to replace whole eggs.
We also used diced King oyster mushrooms and Enoki mushrooms to mimic the meaty texture of ground beef.
Some people like to use firm tofu and turmeric powder to make a tofu scramble as an egg substitute.
Ingredients and Substitutions
The following ingredients are a good starting base for making traditional Cantonese fried rice with just egg and soy sauce.
- Vegan Egg Replacer - We like using Just Egg
- Leftover white rice or brown rice
- King Oyster Mushrooms
- Enoki Mushrooms
- Ground White Pepper
- Green Spring Onions
- Dark Soy Sauce
- Vegetable Oil or Neutral Tasting Oil (not olive oil)
- Brown Sugar
- Yellow Onion
- cilantro for garnish (optional)
- Lettuce (optional)
- Frozen Vegetables like peas and corn (optional)

We first tested Just Egg's convenient liquid form for our Best Vegan Egg Flower Soup Recipe.
We love that Just Egg is made in Canada and is high in protein with less saturated fat. Just Egg ingredients contain no cholesterol, no industrial chicken farms, and no artificial flavours.
One serving of Just Egg liquid (three tablespoons) only has 70 calories and 1 gram of carbohydrates which is pretty nice if you count your macros on a keto diet!
The application works better for the vegan simple egg fried rice than for our vegan egg flower soup. The egg liquid was able to coat the individual grains of rice like real eggs.

On the other hand, we liked the convenience of popping a packet of Just Egg Folded plant eggs into the kitchen counter oven and achieving that perfect egg sandwich on an English muffin feeling.

Tips on How To Make the Best Egg Fried Rice
Perfect rice is quick and easy to make.
But if you don't want your fried rice to end up soggy, here are some helpful tips to make Next-Level Fried Rice!
Cold rice is critical! A good choice is to get takeout rice or leave your freshly cooked white rice in the fridge overnight. Freshly cooked rice is too wet for making good fried rice. The day-old rice is perfectly dried the next day.
Remove the clumps in the leftover rice. A great way is to spend a little time and use your hands to work thru the rice.
Now your rice is ready to move around quickly in the wok!
How To Cook The Best Plantbased Beef Fried Rice Recipe
Ensure you have enough leftover cold rice.
An easy way to cook folded Just Egg patties is to pop one to two packets of Just Egg folded eggs into the toaster oven at 425F for 15 minutes. Once it is nicely toasted, remove it from the oven and dice it into little bite-size pieces.
While the plant-based egg alternatives are cooking, prepare the other ingredients.
Wash and finely dice green onions, yellow onions, King Oyster Mushrooms, and Enoki Mushrooms.
Marinate diced mushrooms, dark soy sauce, salt, and ground white pepper in a medium bowl.
Once the Just Egg folded patties are almost done cooking, you can start stir-frying your vegan egg fried rice.
Heat a little oil in a carbon steel wok, large skillet or non-stick pan at medium-high heat.
Sweat out the yellow onions in the hot wok to enhance their naturally sweet flavours.
Add leftover rice to the wok and gently fold. Be careful not to break the rice with the spatula.
Evenly pour Just Egg liquid over the rice and continue folding until each grain of rice is evenly coated.
Add previously diced Just Egg folded patties into the rice. Mix well.
Add marinated mushrooms and drizzle soy sauce to the side of the large wok.
Add vegan oyster sauce and mix well. This will keep the vegan minced beef fried rice dry, fragrant and full of wok hei!
Serve and plate.
Add finely chopped green onions or cilantro on top of your perfect eggy masterpiece!

- 1 Just Egg Folded Egg Packet, toasted
- 3 tbsp Just Egg liquid egg replacer
