Ingredients and Substitutes
When it comes to making delicious summer days lemon loaves, freshness rules. We love the fluffy texture to this quick bread sweet breakfast idea! The best part, this simple lemon bread cake batter can be easily whipped up by hand. You do not even need to bring out the electric mixer! That is how easy and forgiving this lemon poppy seed cake is!
Dry Ingredients
- All Propose Flour
- Poppy Seeds
- Brown Sugar or Monk Fruit Sugar
- Kosher Salt
- Baking Powder
- Fresh Lemons Zest
Wet Ingredients
- Plain Greek Yogurt – using plain yogurt replaces the need for whole milk. You can also use flavored lemon greek yogurt too
- Vegetable Oil
- Large Eggs
- Pure Vanilla Extract

Icing
This easy homemade simple lemon icing is delicious on lemon poppy seed loaf cake, scones, cookies and cakes. It's a good idea to keep this simple recipe handy whenever you need a dose of fresh lemon flavor!
- Fresh Lemon Juice or Orange Juice
- Confectioners' Sugar (Powdered Sugar)
- Garnish
- Fresh Lemons Zest
- Lemon slices
- Sweetened Shredded Coconut Flakes
Instructions
Plenty of poppy seeds is one of my favorite things to add to cakes and sweet treats!
Preheat the oven temperature to 350F.
Add all dry ingredients into a large bowl.
Add zest of 1 lemon and wet ingredients in a separate bowl and mix well.
Fold the dry ingredients into the wet ingredients. Alternatively, add all the main ingredients in a large mixing bowl fitted for your stand mixer with a paddle mixer.
Pour the batter into a loaf pan (5x9”) lined with a sheet of parchment paper. I love these Precut Parchment Paper Sheets compared to those with a big roll.
Bake the lemon cake for 40 mins or until golden brown.
Test for doneness by inserting a skewer or wooden chopsticks into the center of the bread. If it comes out clean, it is cooked thoroughly through the center of your loaf and ready!
Let cool to room temperature on a wire rack.
Combine fresh lemon juice with powdered sugar in a medium bowl with a whisk. Combine until a smooth glaze.
Top with lemon syrup sugar icing, lemon zest and shredded coconut on top of the bread. If you fancy, add fresh lemon slices and an extra drizzle of honey for decoration.
Slice and enjoy with coffee or tea!
