Easy Lemon Poppy Seed Yogurt Loaf

Lemon Icing

  • 3 tbsp Fresh Lemon Juice
  • 1 C Powdered Sugar

 

Garnish

  • Fresh Lemons Zest
  • Lemon slices
  • Sweetened Shredded Coconut Flakes

Instructions

  1. Plenty of poppy seeds is one of my favorite things to add to cakes and sweet treats!
  2. Preheat the oven temperature to 350F.
  3. Add all dry ingredients into a large bowl.
  4. Add zest of 1 lemon and wet ingredients in a separate bowl and mix well.
  5. Fold the dry ingredients into the wet ingredients. Alternatively, add all the main ingredients in a large mixing bowl fitted for your stand mixer with a paddle mixer.
  6. Pour the batter into a loaf pan (5x9”) lined with a sheet of parchment paper. I love these Precut Parchment Paper Sheets compared to those with a big roll.
  7. Bake the lemon cake for 40 mins or until golden brown.
  8. Test for doneness by inserting a skewer or wooden chopsticks into the center of the bread. If it comes out clean, it is cooked thoroughly through the center of your loaf and ready!
  9. Let cool to room temperature on a wire rack.
  10. Combine fresh lemon juice with powdered sugar in a medium bowl with a whisk. Combine until a smooth glaze.
  11. Top with lemon syrup sugar icing, lemon zest and shredded coconut on top of the bread. If you fancy, add fresh lemon slices and an extra drizzle of honey for decoration.
  12. Slice and enjoy with coffee or tea!
