Today we take this classic Hong Kong Style Cafe famous soup breakfast and turning it into a plant-based version with Tomorrow foods Original Bratwursts sausages.

Everyone Has Its Famous Beef and Tomato Macaroni Recipe
The funny thing is Beef and Tomato Macaroni are not only served at every restaurant and every restaurant, Beef and Tomato Macaroni vary in taste.
Every restaurant offers this dish with its own unique flavours - and each is well-known for its own recipe.
What makes the flavour unique comes from the fresh tomato, tomato paste and canned tomato ratio.
Using more fresh tomatoes makes the soup taste more homemade, and using more canned tomatoes yields a more restaurant-like profile.
Plant-Based Vegan Sausages
Since we are trying to include more plant-based ingredients into our everyday cooking. So instead of using beef slices, we will de-case the plant-based vegan sausages and slice them up.
I am using the original bratwurst. The flavour is more neutral because it is less seasoned with herbs, and I can marinate it with soy sauce.
PRO TIP: the sausages are easier to cut when they are semi-defrosted.
Choosing the Right Tomato Paste
The Tomato Paste is the primary source of flavour for the tomato soup base. The more you add, the richer and thicker the soup becomes.
Tomato Paste itself is pretty sour. To keep the flavours balanced, you will want to add an equal proportion of sugar. For example, if the recipe calls for 2 tablespoons of tomato paste, you will need to add 2 tablespoons of sugar.
Tomato paste available in the market varies greatly - it varies significantly from brand to brand. Some are thicker, some richer, some are sourer, while others have a bitter aftertaste.
It's a great special ingredient.
Our favourite to this day is Mutti.
Ingredients and Substitutes
Marinate Ingredients
- 120g plant-based sausage (2 sausages)
- 2 teaspoon soy sauce (Tamari for GF)
- ½ teaspoon sugar
- 1 teaspoon vegetable oil
- ½ teaspoon white pepper
"Beef Macaroni Soup Ingredients"
- 200g macaroni
- 2 tomatoes, diced
- 2 shallots, diced
- 2 tablespoon tomato paste - I like multi
- 2 tablespoon sugar (the tomato paste to sugar ratio should be 1:1)
- 1 teaspoon vegetable bouillon
- Dash of salt and black pepper
- 1L water
How To Make Hong Kong Tomato Beef Macaroni Soup
First marinate the vegan plant-based sausages with the marinade mixture.
While the sausages are marinating, let's prep our tomato soup base!
First, cut up your shallots. If you don't have shallots, you can use onions also.
Cut up two medium-sized tomatoes. Or, if you like, feel free to add as many as you like. But make sure you have at least two fresh tomatoes to help the soup taste alive!
You can choose to either sweat out the onions first or not. It is really up to you. I find that if you sweat it out - even - just a little, it is more fragrant and less sharp!
If you are in a hurry or just want to skip to this step….
First, add in some oil, heat it up over medium-high heat.
Add in shallots or onions, sweat it out.
Add in tomato paste, sugar, black pepper, and a dash of salt. Mix well.
Add in tomatoes and canned tomatoes - you can choose to use either diced or crushed. I personally prefer diced.
Add in water. Mix well.
Cover the lid and bring it to a boil.
Once it is boiling, reduce the heat to a low simmer and cook it for 10 to 15 minutes.
PRO TIP: you can replace a portion of the water with vegetable broth. Or, if you don't care if this soup is 100% vegan or plant-based, you can also use chicken broth and chicken essence powder.
Add in plant-based sausages and boil until thoroughly cooked.
How to Cook HK Style Macaroni
While the soup is cooking, let's cook the macaroni according to the package with salted water. So if the package asked you to cook it for 10 minutes - we would cook it for approximately 8 minutes.
Why do we have to reduce the cooking time?
Because you would cook the macaroni with the tomato soup for a little while before serving. This way, the flavours get to mingle and blend better, and it doesn't taste separated and like you've just added a spoonful of tomato soup over macaroni… and inside, the macaroni is still filled with starchy pasta water.
So if you can, drain the pasta water from the macaroni out first before adding it to the tomato soup. The addition of extra pasta water may dilute the perfectly cooked tomato soup base.
Tell me, do you prefer softer macaroni or macaroni that is harder and al dente?
I don't know why but I find that softer macaroni seems to taste better with this Hong Kong Style tomato soup….
Pro Tip: If you follow the packaged instructions - remember it is timed for your pasta to taste al dente.

Instructions
First marinate the vegan plant-based sausages with the marinade mixture.
Tomato Soup Base
- Add oil in a large sauce pan and heat it up over medium-high heat.
- Add in shallots or onions, sweat it out for 5 minutes.
- Add in tomato paste, sugar, black pepper, and a dash of salt. Mix well.
- Add in fresh tomatoes, canned tomatoes, and water and bring to a boil.
- Once it is boiling, cover the lid and reduce the heat to a low simmer and cook it for 10 to 15 minutes.
- Add in vegan plant-based sausages and cook thoroughly.
- While the tomato soup base is cooking, cook macaroni in a separate pot according to package instructions.
- Drain cooked macaroni well and add to tomato soup base. Mix well.
- Divide into two bowls
- Serve and enjoy!
