Take this classic HK Style Breakfast cafe famous soupy dish and make it with plant based with TMRW Foods original bratwursts vegan sausages !! We love the texture and mouthfeel of these neutral tasting sausages. It is perfect to hold on to and build flavours !!

Marinate Ingredients

 

Beef Macaroni Soup Ingredients

  • 200g macaroni
  • 2 tomatoes, diced
  • 2 shallots, diced
  • 2 tbsp tomato paste – I like multi
  • 2 tbsp sugar (the tomato paste to sugar ratio should be 1:1)
  • 1 tsp vegetable bouillon
  • Dash of salt and black pepper
  • 1L water

Instructions

First marinate the vegan plant-based sausages with the marinade mixture.

 

Tomato Soup Base

  1. Add oil in a large sauce pan and heat it up over medium-high heat.
  2. Add in shallots or onions, sweat it out for 5 minutes.
  3. Add in tomato paste, sugar, black pepper, and a dash of salt. Mix well.
  4. Add in fresh tomatoes, canned tomatoes, and water and bring to a boil.
  5. Once it is boiling, cover the lid and reduce the heat to a low simmer and cook it for 10 to 15 minutes.
  6. Add in vegan plant-based sausages and cook thoroughly.
  7. While the tomato soup base is cooking, cook macaroni in a separate pot according to package instructions.
  8. Drain cooked macaroni well and add to tomato soup base. Mix well.
  9. Divide into two bowls
  10. Serve and enjoy!
