    • 5-Minute Arctic Surf Clam Salad (Easy Hokkigai)

    What Are Arctic Surf Clams?

Arctic surf clams (Spisula sachalinensis), known as hokkigai (北極貝) in Japanese, are large saltwater bivalves harvested from the cold Canadian Atlantic waters. They grow up to 10 cm and can live 30 years in the pristine waters off Canada's east coast.

These clams differ dramatically from the littlenecks or Manila clams you find at seafood counters. The meat is thick, meaty, and substantial. You're biting into something with real heft.

    The Distinctive Look

Fresh hokkigai feature that signature rose-red and white colouration everyone recognizes from sushi restaurants. The "tongue" or foot is what you eat, the muscular part the clam uses to burrow into sandy ocean floors.

That vibrant colour isn't added or enhanced. It's completely natural, developed through the clam's diet of phytoplankton in cold Canadian waters. The colour locks in during the blanching process right after harvest.

When properly prepared, the texture sits between tender and firm with a satisfying snap. Not chewy like overcooked calamari, not mushy like canned clams.

    How They're Harvested

Canadian fisheries harvest arctic surf clams using hydraulic dredges that operate in deep water 30-60 metres below the surface. The clams live buried in sand and gravel, making them perfect for sustainable harvesting.

Clearwater and other MSC-certified operations catch these clams miles offshore from Nova Scotia. Once aboard, crews steam them immediately to loosen the meat and preserve that brilliant colour. The whole operation happens at sea, ensuring maximum freshness.

    Why Japanese Cuisine Loves Them

Hokkigai became a sushi staple because of their sweet flavour and clean ocean taste. Japanese chefs prize the texture, that distinctive crunch you don't get from other shellfish.

The meaty consistency holds up beautifully for nigiri, maintaining structure without falling apart. Each piece delivers protein and omega-3s with minimal calories, fitting perfectly into Japanese culinary principles.

Canada exports roughly 98% of its arctic surf clam harvest to Asia, primarily Japan, where they command premium prices. What shows up at Costco or your local Asian market represents a tiny fraction of the total catch.

    Nutritional Powerhouse

These clams pack 18 grams of protein per 100-gram serving with less than 2 grams of fat. You're looking at lean, complete protein that your body actually absorbs efficiently.

They're loaded with iron, helping prevent anemia and supporting healthy blood cells. The omega-3 fatty acids support heart and brain health without the mercury concerns of larger fish.

One serving delivers significant vitamin B12, selenium, and zinc. This isn't empty calories, it's legitimate nutrition in delicious form.

Why This Arctic Surf Clam Appetizer Works

You'll defrost the clams in cold water, slice them thin, and toss with fresh aromatics. No cooking required for the clams themselves.

The spicy soy dipping sauce gets poured hot over ginger and scallions. That sizzle creates an aromatic oil that coats every piece of seafood.

It's basically a Chinese clam salad that looks way fancier than the effort involved. Your guests will think you've been prepping all day.

What Does Arctic Surf Clams Taste Like

Taste and Texture: What to Expect

Hokkigai taste mildly sweet with ocean notes that aren't fishy or overwhelming. The meat has substantial chew without being tough.

When you slice them thin and soak them with lime, that faint sweetness intensifies. The citrus brings out flavours you'd miss otherwise.

White cockle clams add another dimension if you can find them. They're less briny but equally tender, creating contrast in every bite.

    Arctic Surf Clams Health Benefits

Arctic surf clams deliver high quality protein without the fat bomb. They're loaded with iron and omega-3 fatty acids your body actually uses.

Low calorie, nutrient dense, and satisfying. This isn't rabbit food masquerading as a real meal.

The ginger adds anti-inflammatory benefits while scallions provide vitamin K. You're getting wellness perks without trying.

Where To Buy Arctic Surf Clams

Most major grocery stores stock frozen surf clams in their seafood section. Look near the sushi-grade fish or in specialty Asian markets.

I order from Clearwater (shop.clearwater.ca) and they ship frozen seafood across Canada. The quality beats anything I've found in stores.

Use discount code "INSTANOMSS10" for 10% off your Clearwater purchase.

Their Arctic surf clams arrive in insulated packaging with ice packs. Everything shows up frozen solid, exactly how it left Nova Scotia.

    Clearwater Arctic Surf Clams

I ordered my frozen surf clams and white cockle clams from Clearwater - shop.clearwater.ca.

They offer a wide range of delicious sustainable seafood of the highest quality products.

If you are ordering seafood online for the first time, trust that Clearwater ships high quality, premium wild, MSC-certified products across Canada. Option for contactless delivery for grocery shopping and avoid the disappointment of long lines at supermarkets. Clearwater also sells other eco-certified seafood products online and in major supermarkets.

My Northern clams arrived neatly packaged on the day I requested with an insulated box with ice and a tracking number.

USE MY DISCOUNT CODE "INSTANOMSS10" FOR 10% OFF YOUR CLEARWATER.CA PURCHASE!

How Clearwater Harvests Arctic Surf Clams

Clearwater catches arctic surf clams miles offshore from Bedford, Nova Scotia. The water there runs deep, cold, and pristine.

Once aboard, clams get steamed immediately to lock in colour and flavour. The meat gets extracted, then flash frozen at sea within hours of harvest.

This process preserves freshness better than anything sitting in a grocery case for days. You're getting premium quality without the premium hassle.

Raw ingredients for hokkigai salad including frozen arctic surf clams, fresh ginger, green onions, and sesame oil

    Ingredients and Substitutes

Everything You Need for Making Hokkigai Salad Recipe

The ingredient list for this arctic surf clam salad is deliberately short. You need quality seafood, fresh aromatics, and a few pantry staples you probably already own.

Most items come from your regular grocery run. The only specialty purchase is the hokkigai itself, available at Costco or Asian markets.

Can't find a specific ingredient? I've included smart substitutions that maintain the dish's integrity without sending you on a scavenger hunt across town. You'll get the same flavour profile with ingredients that are actually accessible.

    Arctic Surf Clams (The Star)

Arctic surf clams are the foundation of this entire dish. You want the pre-cooked, flash-frozen variety that comes in 400g packages or larger Costco bags.

Clearwater and Ocean's brands are consistently excellent. The clams should look rose-red and white when frozen, with no brown discolouration or freezer burn. Avoid any packages with excessive ice crystals, that signals poor storage conditions.

    • Can I use fresh surf clams instead? Fresh raw surf clams require different preparation and cooking. This recipe is designed specifically for the pre-blanched frozen variety. Fresh would need steaming first, adding complexity and time.
    • What about canned surf clams? No. The texture is completely wrong, mushy and metallic-tasting. Frozen is the only way to get that signature crunch.
    • Costco vs Asian market quality? Both work perfectly. Costco sells larger quantities (2.2 lb bags) at better per-pound pricing. Asian markets offer smaller 400g packages if you don't need bulk.

    Cockle Clams (Optional Texture Boost)

White cockle clams add textural contrast and another layer of sweet ocean flavour. They're softer than hokkigai but equally delicious.

These also come frozen and pre-cooked. Look for them at Asian supermarkets near the surf clams, usually in 400g packages.

    • Can I skip cockle clams entirely? Absolutely. Just use 800g of arctic surf clams total. The recipe works perfectly with hokkigai alone.
    • What about fresh cockles? Same issue as fresh surf clams. They need cooking, which defeats the 5-minute timeline. Stick with frozen.

    Lime (The Secret Weapon)

Fresh lime is non-negotiable here. That citrus soak amplifies the natural sweetness of the clams while firming up the texture.

You need one lime, sliced thin for the ice water bath. The acidity works magic in those 2 minutes of soaking.

    • Can I use lemon instead? Yes, but the flavour shifts slightly. Lemon is more tart, less aromatic. Lime has that distinctive Asian cuisine character that complements the ginger and scallions better.
    • What about bottled lime juice? It works in a pinch, but fresh is significantly better. The aromatic oils in fresh lime zest matter, even if you're not directly zesting it.

    Green Onions (Aromatic Backbone)

Green onions (scallions) provide that mild onion flavour without overpowering the delicate seafood. You need the entire stalk, white and green parts, julienned thin.

Look for bunches with crisp green tops and firm white bulbs. Avoid any with slimy or yellowing leaves.

    • Can I use regular onions? No. Too harsh and pungent. They'll completely dominate the clams.
    • What about chives? They work as a garnish but lack the substance and mild bite of scallions. Use both if you want extra green colour.
    • Shallots instead? Too strong and sweet. Scallions are the right balance here.

    Ginger (Essential Aromatics)

Fresh ginger root brings warmth and cuts through the richness of the seafood. You need about 2 inches for the salad, plus another half inch for the dipping sauce.

Choose firm ginger with tight, smooth skin. Older ginger gets fibrous and loses punch. Young ginger is ideal but not essential.

    • Can I use ground ginger powder? Absolutely not. The texture and flavour are completely different. Fresh ginger is mandatory.
    • What about ginger paste? It works in the dipping sauce where texture doesn't matter, but you'll miss the visual appeal of those delicate julienned strips in the salad.
    • Galangal instead? Too medicinal and sharp. Stick with regular ginger root.

    Sesame Oil (Flavour Amplifier)

Toasted sesame oil adds nutty depth that makes the entire salad more complex. You need pure sesame oil, not the blended vegetable oil versions.

Lee Kum Kee and Kadoya are excellent brands. The oil should smell intensely nutty and aromatic. If it's neutral or bland, it's too old or low quality.

    • Can I skip sesame oil? You lose significant flavour depth. The salad becomes flat without it.
    • What about regular sesame oil (not toasted)? It's too mild. You want the darker, toasted variety for maximum impact.
    • Olive oil instead? Wrong flavour profile entirely. This is an Asian dish, it needs Asian ingredients.

    Bird's Eye Chilies (The Heat)

Fresh bird's eye chilies bring clean, bright heat to the dipping sauce. Thai chilies work identically.

Remove the seeds if you want milder heat. Keep them for serious spice lovers.

    • Can I use dried chili flakes? Yes, they work well. Start with 1 teaspoon and adjust up. The flavour is slightly different but acceptable.
    • What about sriracha or chili paste? Too thick and complex. You want clean chili heat, not fermented flavours.
    • Jalapeños instead? They work but taste more vegetal, less sharp. Use half a jalapeño to replace two bird's eye chilies.

    Sugar (Balance Agent)

Regular white granulated sugar balances the salt in the soy sauce and rounds out the dipping sauce flavours.

    • Can I use brown sugar? It works but adds molasses notes that feel slightly off. White sugar is cleaner.
    • What about honey or maple syrup? Too distinct in flavour. They'll compete with the other aromatics rather than supporting them.
    • Artificial sweeteners? They don't dissolve the same way and some turn bitter when heated. Skip them.

    Vegetable Oil (Heat Carrier)

Neutral-tasting vegetable oil carries heat to bloom the aromatics in your dipping sauce. You need something with a high smoke point.

Canola, grapeseed, or refined peanut oil all work perfectly. Avoid olive oil (too low smoke point, wrong flavour) or anything strongly flavoured.

    • Can I use the same sesame oil? No. Sesame oil burns at lower temperatures and costs too much to use for heating. Save it for finishing.
    • What about avocado oil? Perfect choice if you have it. High smoke point, neutral flavour.

Steamed Fish Soy Sauce (Umami Depth)

Steamed fish soy sauce is lighter, slightly sweeter, and less salty than regular soy sauce. Lee Kum Kee makes the most common version.

This isn't fish sauce (completely different product). It's soy sauce formulated specifically for steamed fish and seafood.

    • Can I use regular light soy sauce? Yes, it's the best substitute. Add a tiny pinch of sugar to approximate the sweetness.
    • What about dark soy sauce? Too thick and intensely flavoured. It'll overpower the delicate clams.
    • Tamari or coconut aminos? Tamari works well for gluten-free needs. Coconut aminos are too sweet and lack the fermented depth.
    • How much sodium are we talking? Steamed fish soy sauce runs about 800-1000mg sodium per tablespoon. If watching sodium, start with 2 tablespoons instead of ¼ cup and adjust.

Most dry goods ingredients, tools, and supplies can be purchased at local Asian markets, Chinese grocery stores, or Amazon Online. Amazon Prime members receive free shipping and faster delivery times.

How to Eat Frozen Surf Clams

Frozen surf clams need gentle defrosting to maintain their texture. Rushing this step makes them rubbery.

Place your frozen hokkigai in a large bowl under cold running water. Let the water flow gently over them for 3-4 minutes.

Don't use hot water. Don't microwave them. Both methods cook the exterior while leaving the inside frozen, destroying that signature crunch.

Once defrosted, you've got three options: eat them raw like sashimi, add them to cold salads (like this recipe), or toss them into hot dishes at the very end of cooking.

The key with hot applications? Add surf clams in the final 30 seconds. Any longer and they turn into hockey pucks.

    Defrosting Timeline

    • Cold water method: 3-4 minutes (recommended)
    • Refrigerator overnight: 8-12 hours (safest for make-ahead)
    • Room temperature: Never (food safety risk)

Pat them completely dry after defrosting. Wet clams won't absorb your dressing or sauce properly.

    Costco Arctic Surf Clam Recipes

Costco sells frozen arctic surf clams in 2.2 lb bags, usually in the frozen seafood section near the shrimp and scallops. The price point beats most Asian markets.

Their hokkigai comes pre-blanched and individually quick frozen (IQF), making portion control dead simple. Grab what you need, leave the rest frozen.

    Quick Costco Surf Clam Ideas

Five-minute surf clam salad (this recipe): Defrost, slice, toss with ginger and scallions. Serve with spicy soy sauce. Feeds 4-6 as an appetizer.

Surf clam poke bowl: Dice defrosted clams, mix with soy sauce, sesame oil, and sriracha. Serve over rice with cucumber and avocado. Ready in 6 minutes.

Garlic butter surf clams: Heat butter with minced garlic until fragrant. Toss in sliced clams for 30 seconds. Finish with lemon juice and parsley. Takes 4 minutes.

Surf clam pasta: Cook linguine. In the final minute, add sliced clams to the pasta water. Drain, toss with olive oil, garlic, and chili flakes. Under 10 minutes.

Asian surf clam lettuce cups: Dice clams, mix with hoisin sauce, diced water chestnuts, and green onions. Serve in butter lettuce leaves. Five minutes prep.

The Costco surf clams work in any recipe calling for cooked seafood. Think of them as your secret weapon for impressive meals without the work.

    Costco vs Asian Market Quality

I've tested both. Costco's frozen surf clams match the quality I find at specialty Asian markets, usually at a better price per pound.

The main difference? Packaging size. Costco sells larger quantities, so you'll need freezer space. But the per-serving cost drops significantly.

For this 5-minute arctic surf clam salad, one Costco bag gives you enough for 8-10 servings. Perfect for meal prep or entertaining.

Instructions: How To Make 5 minute Seafood Appetizer With Arctic Surf Clams

Defrost your hokkigai under cold running water in a large bowl. While they're defrosting, julienne your ginger and scallions.

Slice clams in half, remove dark stomach section. Drop into ice water with lime slices.

Make your dipping sauce. Heat oil until shimmering, pour over aromatics in a bowl, add soy sauce. Done.

Drain clams, pat dry, toss with remaining ginger and scallions, drizzle with sesame oil. Plate and serve.

That's it. No fancy knife skills required. No complicated techniques. Just good ingredients assembled quickly.

    Step-by-Step Clam Salad Assembly

Grab your defrosted surf clams and a sharp knife. Slice each clam straight down the middle on the bias.

You'll see a dark section inside (the stomach). Pinch it out and toss it. The rest is all edible.

Drop your cleaned clam halves into a bowl of ice water with those lime slices. This does two things: firms up the texture and amplifies their natural sweetness.

While they soak (2 minutes maximum), julienne your ginger and scallions. Toss most of them with the drained, dried clams and a drizzle of sesame oil.

Save some aromatics for your dipping sauce. Transfer everything to a serving plate. You're ready to eat.

    Making the Killer Dipping Sauce

This sauce elevates the entire dish from "nice" to "holy hell, what is this?"

Put julienned ginger, scallions, chopped chilies, and sugar in a small heat-proof bowl.

Heat your vegetable oil in a pot until it shimmers. Not smoking, just shimmering. Pour it directly over your aromatics.

You'll hear that satisfying sizzle. The hot oil releases all those aromatic compounds and creates a fragrant base.

Stir in your steamed fish soy sauce. That's your sauce. Thirty seconds, max.

Spicy Soy Dipping Sauce 辣椒豉油 with Hot oil , ginger and chilies creating sizzle for spicy soy dipping sauce
    Spicy Soy Dipping Sauce 辣椒豉油

Hokkigai are already cooked during processing. You're not "preparing" them in the traditional sense, you're serving them.

The less you fuss, the better they taste. Oversoak them and they get waterlogged. Overdress them and you lose that delicate sweetness.

This 5-minute approach respects the ingredient. Quick prep means the clams stay firm, sweet, and absolutely perfect.

    Texture and Flavour Notes

Properly prepared arctic surf clam salad has a satisfying crunch without being rubbery. The clams should yield to your teeth but have substance.

The ginger adds warmth without overpowering. Scallions bring a mild onion flavour that complements the sweetness of the seafood.

That lime soak? Game changer. It brightens everything and makes the natural clam flavour pop.

    Make-Ahead Strategy

Defrost your surf clams the night before and store them covered in the fridge. This gives you a true 2-minute assembly time.

Julienne your ginger and scallions up to 4 hours ahead. Keep them wrapped in damp paper towels so they stay fresh.

Don't mix everything together until right before serving. The ginger will overwhelm if it sits too long.

The spicy soy dipping sauce keeps for 3 days refrigerated. Make a double batch and use it on everything.

    Serving Suggestions

This 5-minute arctic surf clam salad works as a standalone appetizer before heavier Chinese dishes.

Or pile it onto crackers for cocktail parties. The clams hold up beautifully on crostini or rice crackers.

For a light meal, serve it over mixed greens with sliced cucumber and radish. Add some crispy wonton strips for crunch.

Pair with light lager, dry sake, or crisp Sauvignon Blanc. Nothing too heavy that'll compete with the delicate seafood flavour.

    Chinese Lunar New Year Symbolism

The rose-red colour in hokkigai symbolizes prosperity and good fortune in Chinese culture. Serving this during celebrations brings luck.

Green scallions represent jade, harmony, and wealth. You're literally serving auspicious ingredients.

The quick prep time means you can focus on other dishes without sacrificing this impressive opener.

    Frequently Asked Questions (FAQs)

Common Questions About Quick Surf Clam Recipes

You've got questions about working with frozen arctic surf clams, and I've got answers from years of testing this recipe. These are the actual questions readers ask most, plus a few issues you'll want to avoid before they happen.

Some of these seem obvious until you're standing in your kitchen with defrosted clams wondering if you messed something up. Others address the "can I substitute this" situations that always come up when cooking.

If your specific question isn't here, drop it in the comments. Chances are someone else is wondering the same thing.

Can I make this in advance?

Prep everything separately up to 4 hours ahead. Assemble right before serving to maintain texture.

What if I can't find cockle clams?

Skip them. The recipe works perfectly with just arctic surf clams.

Can I use a different dipping sauce?

Absolutely. Plain soy sauce, ponzu, or even a sesame-ginger vinaigrette all work.

How do I know if my clams are bad?

Fresh defrosted surf clams smell like clean ocean. Any fishy or ammonia smell means toss them.

    Can kids eat this?

Yes, but skip the spicy dipping sauce. Offer plain soy sauce on the side instead.

Can I eat surf clams raw?

Absolutely. Hokkigai are typically served raw as sushi or sashimi. They're pre-cooked during processing, then frozen.

Do I need to cook frozen surf clams?

No. Defrost, clean, and serve them cold. Overcooking makes them rubbery.

What's the black part inside surf clams?

That's the stomach. Remove and discard it, it doesn't taste good.

How long do defrosted surf clams last?

Use them within 24 hours of thawing. Don't refreeze once defrosted.

    Can I substitute regular clams?

Not really. Arctic surf clams have a unique texture and flavour you can't replicate with littlenecks or other varieties.

    Troubleshooting Your Hokkigai Recipe

Clams taste bland? You didn't soak them with lime long enough or your sesame oil is stale. Fresh ingredients matter.

Texture too chewy? You overcooked them or didn't slice thin enough. Remember, these are meant to be served cold and raw-ish.

Dipping sauce not sizzling? Your oil wasn't hot enough. Heat it until it shimmers before pouring.

    Storage and Food Safety

Keep raw surf clams refrigerated at 4°C or below. Use within one day of defrosting.

The dipping sauce lasts up to three days covered in the fridge. Reheat gently if serving warm.

Never refreeze thawed clams. The texture degrades badly and food safety becomes questionable.

Why This Recipe Works for Beginners

You can't really mess this up. The arctic surf clams are already cooked, so there's no food safety panic.

No special equipment needed. Just a bowl, a knife, and a pot to heat oil.

The ingredient list is short. Most items are pantry staples you already have.

Even if your knife skills aren't great, rough julienne works fine here. This isn't fine dining, it's smart cooking.

    Final Tips for Perfect Results

Buy quality surf clams from Clearwater. The ingredient does most of the work, so start with the best.

Don't skip the lime soak. Those 2 minutes make a massive difference in final flavour.

Taste your dipping sauce before serving. Some brands of fish soy sauce are saltier than others. Adjust accordingly.

Serve cold or at room temperature. Never warm. These clams shine when they're chilled.

Use this recipe as your gateway to other quick seafood dishes. Once you realize how simple frozen surf clams are to work with, you'll find yourself using them constantly.

The beauty of this 5-minute arctic surf clam salad isn't just speed. It's that something this fast has no business tasting this good.

    1. Place **frozen arctic surf clams** in a large mixing bowl under cold running water. Defrost for 3-4 minutes until completely thawed.
    2. Slice each clam in half on the bias. Remove and discard the dark stomach section.
    3. Add clam halves and lime slices to a bowl of ice water. Soak for 2 minutes to enhance sweetness and firm texture.
    4. Drain clams and pat completely dry with paper towels.

Assemble the Clam Salad (1 minute):

    1. In a large mixing bowl, combine defrosted surf clams and cockle clams (if using).
    2. Add julienned green onions and ginger.
    3. Drizzle sesame oil over the mixture and toss gently until evenly coated. 8. Transfer to serving plate and set aside.

Make Spicy Soy Dipping Sauce (2 minutes):

    1. In a small heat-proof dipping bowl, add julienned green onions, ginger, chopped bird's eye chilies, and sugar.
    2. Heat vegetable oil in a small pot over medium-high heat until shimmering (not smoking).
    3. Carefully pour hot oil directly over the aromatics in the bowl. You'll hear a sizzle and see bubbles.
    4. Add steamed fish soy sauce to the bowl and stir well.

    Serve:

    1. Serve hokkigai cold appetizer immediately with spicy soy dipping sauce on the side.
    2. Enjoy within 2 hours of assembly for best texture and flavour.

Hi Sabrina! I highly recommend ordering from Clearwater. Their products are super fresh and when its shipped direct from source, it's always fresher than buying from third party.

Nancy! I absolutely LOVE surf clams and I had no idea they are harvested off the coast of Nova Scotia. There's just something about their awesome chewy texture that I adore. I always order them with sushi if I can but I'm definitely going to look into ordering some directly. Thanks for this really informative post.
