Five Turkey Sandwich Variations Worth Trying

Got mountains of turkey leftovers? Here's how to make leftover turkey sandwich variations throughout the week.

Loaded Thanksgiving sandwich with gravy and all the fixings hits different on day one. Classic turkey sandwich with Havarti, lettuce, and tomatoes works when you need something lighter. Vietnamese-style banh mi brings fresh cilantro, scallions, and pickled carrots into the mix. A simple version with just hot turkey slices, butter, and toast does the job when you're not bothered. Turkey, bacon, cranberry, and brie wraps travel well for lunch.

Choosing the Right Bread for Hot Turkey Sandwiches

You need hearty bread for this turkey sandwich recipe. We're talking thick-sliced sourdough bread that won't collapse under the weight of gravy and all those sides. Toast it properly and it holds everything together like it's got a job to do.

Want an open-faced version with stuffing? Go ahead. Nobody's judging what you do with your leftovers.

The Famous Ross Geller Moist Maker Sandwich

FRIENDS fans know what's up. Ross Geller's sandwich had turkey, stuffing, gravy, cranberry sauce, and one piece of gravy-soaked bread in the middle. That's the Moist Maker. It appeared in season 5, episode 9, "The One with Ross' sandwich." The man had a point about that sandwich.

More Ways to Use Leftover Roast Turkey

Looking beyond thanksgiving leftover sandwich ideas? Leftover turkey casserole gives you a complete meal without much effort. Turkey pot pie with puff pastry takes more work but pays off. Fried rice cleans out the fridge fast. Turkey soup stretches those leftovers even further.

These leftover thanksgiving turkey recipes keep dinner interesting all week long.

What to Serve Alongside Turkey Sandwiches

Skip the chips if you want. Roasted Brussels sprouts with balsamic work well. A simple green salad cuts through the richness. Sweet potato fries add crunch. Pickles bring acid. Sometimes the sandwich is enough on its own, though.

    Ingredients and Substitutes

This day after Thanksgiving sandwich transforms your holiday spread into something you'll actually look forward to eating. The trick is warming everything properly and stacking it right.

    For the sandwich:

    • sourdough bread, thick cut
    • leftover roasted turkey, sliced thick
    • cranberry sauce
    • mayo (optional, but recommended)
    • leftover mashed potatoes
    • leftover stuffing
    • turkey gravy, warmed
    • sautéed kale (or any leftover greens)

Instructions - How to Make Best Leftover Thanksgiving Turkey Sandwich Recipe

Toast 4 slices of sourdough bread until golden and crisp. While the bread toasts, reheat leftover turkey slices in a non-stick pan over medium-high heat. Warm them through without drying them out.

Spread one side of two toast pieces with cranberry sauce, mashed potatoes, and mayo. This turkey sandwich with mashed potatoes base is key. Layer turkey slices on top. Add stuffing, drizzle warm gravy over everything, and finish with sautéed kale.

Spread the remaining toast slices with more cranberry sauce. Top the sandwiches, cut in half, and serve while everything's still warm. That's your Thanksgiving leftover sandwich sorted.

The gravy-soaked bread makes all the difference. Don't skip warming the gravy. Cold gravy on a hot turkey sandwich with gravy is a crime.

    Frequently Asked Questions (FAQs)

Common Questions About Leftover Turkey Sandwiches

Got questions about making the perfect leftover turkey sandwich? You're not alone. People ask us about bread choices, storage times, and whether Ross's Moist Maker is actually achievable at home. Here's everything you need to know about turning Thanksgiving leftovers into next-level sandwiches.

What's the best bread for a leftover turkey sandwich?

Thick-sliced sourdough holds up best against gravy and all those wet toppings. It's sturdy enough to handle mashed potatoes, cranberry sauce, and stuffing without falling apart. Toast it well and you've got a solid foundation. Ciabatta or a crusty French loaf work too if that's what you've got.

How long does leftover turkey last in the fridge?

Leftover turkey stays good for 3 to 4 days when stored properly in an airtight container. Keep it in the coldest part of your fridge, not the door. If you've got more than you can use in that time, freeze it within two days for best quality.

Can you freeze leftover turkey sandwiches?

Not assembled, no. The bread gets soggy and the texture goes weird. Freeze the turkey separately in portion-sized bags and make fresh sandwiches when you want them. Gravy, stuffing, and mashed potatoes freeze fine on their own too.

What cheese goes best with turkey sandwiches?

Havarti melts beautifully and has a mild, creamy flavour that doesn't fight with the other ingredients. Swiss, provolone, or white cheddar work well too. Brie adds richness if you're feeling fancy. Skip the cheese entirely if you're loading up with all the Thanksgiving sides.

How do you reheat leftover turkey for sandwiches?

A non-stick pan over medium-high heat works better than the microwave. The air fryer also works wonders! The turkey warms through without drying out and you can add a splash of gravy or broth to keep it moist. Microwave makes it rubbery. Takes just 2 to 3 minutes in the pan.

What was on Ross's sandwich from Friends?

Ross Geller's famous Moist Maker had turkey, stuffing, gravy, and cranberry sauce with a piece of gravy-soaked bread in the middle. That middle slice is what made it legendary. The episode aired in season 5 and every Thanksgiving leftover sandwich since has been chasing that same energy.

Do you eat turkey sandwiches hot or cold?

Both work, depends on your mood. Hot turkey sandwiches with warm gravy hit different on a cold day. Cold sandwiches with crisp lettuce and mayo are easier for lunch on the go. This recipe's definitely better hot since the gravy and mashed potatoes need warming anyway.

What sides go well with turkey sandwiches?

Roasted Brussels sprouts, a simple green salad, or sweet potato fries complement without competing. Pickles cut through the richness. Honestly, if you've loaded the sandwich with all the Thanksgiving leftovers, you probably don't need much else. Maybe just a cold beer.

Can you make turkey sandwiches ahead of time?

Yes, but hold the gravy until serving. Assemble everything else, wrap tightly, and store in the fridge for up to a day. Add warm gravy right before eating. The bread stays crispier this way and nothing gets soggy sitting around.

How do you keep turkey sandwiches from getting soggy?

Toast your bread properly, that's the first defence. Spread mayo or butter on the bread to create a moisture barrier. Add wet ingredients like gravy and cranberry sauce right before eating, not hours in advance. Layer leafy greens between the bread and wet toppings if you're meal prepping.

What sauce goes with leftover turkey?

Turkey gravy is obvious, but cranberry sauce adds tang that balances the richness. Mayo keeps things moist. Dijon mustard brings sharpness. Aioli or pesto work if you want something different. Hot sauce never hurt anyone either.

How many days after Thanksgiving can you eat leftovers?

3 to 4 days max for turkey, stuffing, and gravy stored in the fridge. Mashed potatoes last about the same. After that, the food safety risk goes up. When in doubt, smell it. If something seems off, toss it. Frozen leftovers stay good for 2 to 3 months.

More Leftover Turkey Recipes Easy and Quick

Leftover turkey sandwiches are just the beginning. When you've made your way through a few days of these loaded beauties, you'll want other ways to use up that bird.

Turkey casserole turns your leftovers into a proper dinner with minimal effort. Layer shredded turkey with vegetables, a creamy sauce, and top it with stuffing or breadcrumbs. One dish feeds everyone and you're not stuck eating cold sandwiches for the fifth day straight.

Turkey pot pie takes more work but it's worth it. Flaky pastry, rich gravy, chunks of turkey, and whatever vegetables you've got kicking around. It's comfort food that doesn't feel like leftovers at all.

Turkey fried rice cleans out the fridge fast. Toss in leftover vegetables, day-old rice, soy sauce, and diced turkey. Dinner's on the table in 15 minutes. It's one of those easy leftover turkey recipes that actually tastes better than reheating the original meal.

Turkey soup stretches those leftovers further than you'd think. Simmer the carcass for stock, add vegetables, noodles, and shredded meat. You've got lunches sorted for another week. Freeze portions and you're set for January too.

Turkey quesadillas with cranberry sauce and cheese hit different when you need something quick. Crispy tortillas, melted cheese, and that sweet-tart cranberry situation make people forget they're eating Thanksgiving leftovers at all.

If you want something lighter than a sandwich, try this Instant Pot turkey pho recipe that turns your leftover turkey into aromatic Vietnamese soup in just 30 minutes.

What to Serve with Turkey Sandwiches

A loaded leftover turkey sandwich is pretty much a complete meal on its own, but sometimes you want a little something on the side. Skip the boring bag of chips and try these instead.

Instant Pot Mashed Potatoes work brilliantly if you're making extra batches for the week. They're creamy, silky, and done in under 30 minutes. The vegan version uses oat milk instead of dairy, and they stay warm in the Instant Pot for hours if you're serving a crowd.

Easy Air Fryer Zucchini with lemon pepper seasoning adds a fresh, zesty crunch that cuts through all that gravy richness. Takes just 15 minutes and you don't need to heat up the whole kitchen. Perfect for using up summer squash or adding a vegetable that actually tastes good.

Roasted Brussels sprouts with balsamic glaze bring a bit of sharpness that cuts through all that gravy and mashed potato richness. Toss them with olive oil, salt, and pepper, roast until crispy, then drizzle with balsamic. They're done in 25 minutes and actually taste good cold too if you're meal prepping.

Simple green salad works when you need something light. Mixed greens, a sharp vinaigrette, maybe some toasted nuts or dried cranberries if you're feeling fancy. The acid from the dressing balances the heavy sandwich situation nicely.

Sweet potato fries add crunch without being boring. Bake them crispy in the oven with a bit of smoked paprika. They're healthier than regular fries but still satisfy that need for something salty and crispy alongside your sandwich.

Pickles are underrated. Dill pickles, bread and butter pickles, even pickled vegetables cut through the richness better than anything else. The acidity wakes up your palate between bites. Keep a jar in the fridge year-round.

Coleslaw with a tangy dressing adds texture and freshness. The crunch contrasts with the soft bread and tender turkey. Make it ahead and it gets better as it sits in the fridge.

Chinese soups like our Tomato Carrot Potato Soup or Chinese Spring Soup turn your turkey sandwich into a proper comfort meal. They're nourishing, easy to make ahead, and add warmth without competing with the sandwich flavours.

Honestly, if you've packed your sandwich with stuffing, mashed potatoes, gravy, and cranberry sauce, you probably don't need much else. Maybe just a cold beer or a glass of wine. Sometimes less is more.

Turn your Thanksgiving leftovers into the ultimate hot turkey sandwich loaded with mashed potatoes, gravy, cranberry sauce, and stuffing. This easy recipe transforms cold turkey into a craveable meal that's better than the original feast.

    • Author: Nancy
    • Prep Time: 5
    • Cook Time: 10
    • Total Time: 15 minutes
    • Yield: 2 people 1x
    • Category: Main Course
    • Method: NA
    • Cuisine: American

    Ingredients

    Scale
    • 4 slices of sourdough bread, toasted
    • 500g leftover roasted turkey, thick sliced
    • 2 tbsp cranberry sauce
    • 2 tbsp mayo (optional)
    • 2 tbsp mashed potato (see my Instant Pot Mashed Potato recipe)
    • ½ C leftover stuffing
    • 2 tbsp gravy, warmed
    • ¼ C sauteed kale

    Instructions

      1. Toast the bread: Toast 4 slices of sourdough bread until golden and crisp. This prevents sogginess from the gravy and wet ingredients.
      2. Reheat the turkey: While bread toasts, reheat leftover turkey slices in a non-stick pan over medium-high heat for 2-3 minutes. Warm them through without drying them out. Add a splash of gravy to keep moisture.
      3. Build the base: Spread one side of two toast pieces with cranberry sauce, mashed potatoes, and mayo. The mashed potato layer adds creaminess and helps other ingredients stick.
      4. Layer the fillings: Top each prepared slice with warm turkey slices, stuffing, a drizzle of warm gravy, and sautéed kale.
      5. Complete and serve: Spread remaining toast slices with more cranberry sauce. Top the sandwiches, cut in half diagonally, and serve immediately while everything's still warm.

    Notes

    • Storage: Assemble fresh for best results. Store components separately in airtight containers for up to 3-4 days in the refrigerator.
    • Reheating: If making ahead, wrap assembled sandwich (hold the gravy) in foil and reheat in 350°F oven for 10 minutes. Add warm gravy before serving.
    • Substitutions: No stuffing? Use extra bread or croûtons. No cranberry sauce? Try a tart fruit jam or chutney.
    • Make it open-faced: Skip the top bread slice for a lighter option served with a fork and knife.

    • Gravy tip: Always warm the gravy separately before adding. Cold gravy on a hot sandwich is a texture crime.
