Chicken Katsu Don is one of my favorite Japanese chicken cutlet rice bowl dish. It is like a delicious chicken schnitzel on top of rice. This Japanese comfort food is packed with umami flavors and textures with simple ingredients like eggs, onions, rice and skinless chicken breasts served with rice or seasonal vegetables.

Ingredients and Substitutes
- Fully Cooked Chicken Strips
- Eggs
- White Onion
- Cooked Japanese Rice (short grain white rice)
- Chicken Katsu Sauce
- Dashi Japanese Stock or Chicken Broth
- Cooking Sake or Rice Wine
- Dark Soy Sauce
- Sugar or Monk Fruit Sugar
Garnish
- Fresh Green Onion
- Mitsuba (Japanese wild parsley)
- Shichimi Togarashi (Japanese chili pepper)
- Furikake (Seaweed seasoning)

Instructions
Cooking a chicken katsu recipe that kids and adults love is easy, even if it is your first time. Just follow this general guideline for an air fryer chicken katsu recipe with creamy eggs and sweet onions.
You can even efficiently meal prep specific steps of this
juicy cutlet of chicken rice bowl ahead of time and quickly whip up an easy weeknight dinner!
Wash and drain the Japanese short grain rice.
Cook in the rice cooker according to the preset mode.

Air Fryer Chicken Cutlet
Preheat air fryer to 400°F.
Pro Tip: Use air fryer parchment paper and line the bottom of the air fryer basket for easy clean-ups.
Place four strips of chicken tenders into the air fryer basket in a single layer. I've tried several large air fryers over the years, but I love THIS one!
Set the cooking time to 12 minutes at 400F. Flipping halfway.
Air Fry until golden brown with crispy perfection.
While the rice and chicken tenders are cooking, it is time to prepare the seasoning broth (chicken katsu sauce).
Thinly slice white onions on a heavy cutting board. Set aside.
Wash and dry fresh scallions or Japanese wild parsley. Finely chopped.
I also highly recommend investing in a quality salad spinner. Drying your veggies thoroughly is so important after they are washed. It helps prevent wilted herbs and vegetables and stays fresher and longer!

Chicken Katsu Seasoning
Whisk two eggs in a small bowl or a pyrex measuring cup with a sprout.
Make seasoning broth by adding dashi stock, cooking sake, dark soy sauce and sugar in a medium mixing bowl. Set aside.

How To Cook Chicken Donburi
Add sliced onions and the seasoning broth to an 8-inch non-stick pan or a donburi pan with a vertical handle. Cook over medium heat. Cook the onions thoroughly.
Add air fried crispy chicken katsu tenders directly onto the bed of juicy onions in the pan. Let the crispy exterior soak up the sauce on both sides of the chicken cutlets.
Drizzle the beaten egg evenly over the juicy chicken with a crispy coating. Gently move and mix the eggs into the chicken strips and onions. Cook for 2-3 minutes. Your eggs should be runny consistency. The residual heat will continue to cook the eggs (it will turn more opaque).
Serve over a hot bowl of white Japanese rice. If you are looking for a healthier chicken katsu "don" option, consider serving over steamed vegetables or cauliflower rice!
Sprinkle Shichimi Togarashi and Furikake seaweed flakes on top.
Garnish with finely chopped green onions, fresh cilantro, or Mitsuba.
This healthier chicken katsu don is definitely one of my favorite Japanese dishes. It always hits the spot since it is such a comfort food meal! Besides, who doesn't love skipping deep frying dredge chicken pieces or chicken thighs with Japanese panko crumbs, eggs, and flour?
