What Is Bánh Xèo?
Bánh Xèo is a savoury pancake crepe in Vietnamese cuisine. These crepes are meant to be eaten with fresh herbs like mung bean, sprouts, green onions and mint. Bánh Xèo fillings often consist of pork and shrimp and dipped in a spicy fish sauce called nước cham.
Dairy-Free and Egg-Free Pancakes
These crispy crepes look quite like an omelette, but there are no eggs in the recipe. The yellow colour comes from turmeric powder.
Combined coconut milk with the Bánh Xèo flour to form the batter.

What is Bánh Xèo Flour?
Bánh Xèo flour is simply rice flour, all-purpose flour (or gluten-free flour) mixed together with sugar, salt, curry powder, and turmeric powder.
Vegan Bánh Xèo
Bánh Xèo can easily be turned into a vegan dish by swamping out the traditional Bánh Xèo fillings of pork and shrimp. Opt to stuff your crispy eggless pancake with a ton of mushrooms (I find king oyster mushrooms and shimeji mushrooms work best), firm tofu, vegan shrimp, seitan bacon and even tempeh is incredible!
Sometimes, I think this plant-based vegetarian Vietnamese recipe is tastier than the traditional crispy crepes.

Ingredients
Bánh Xèo Recipe - Egg-Free Crispy Vietnamese Pancake Crepe
- 80g rice flour
- 3 tbsp AP flour (Or GF flour)
- 1 tsp sugar
- ½ tsp salt
- ¼ tsp turmeric
- ¼ tsp curry powder
- ⅓ C coconut milk
- ⅔ C water
- Vegetable oil for frying
Traditional Banh Xeo Filling
- 100g shrimp
- 100g pork belly, sliced
Vegan Banh Xeo Filling
- 100g king oyster mushrooms, julienne
- 100g shimeji mushrooms
- ½ block firm tofu, sliced
- 10 vegan shrimp, sliced in half
- ½ block tempeh, cooked per packaged instructions, julienne
Banh Xeo Garnish and Wraps
- green onions, 2 inch long, julienne
- mung bean sprouts
- red lettuce
- mint leaves
- cilantro
- sesame leaves
- mustard leaves
- rice paper wrappers
Instructions
- Combine dry ingredients in a bowl mix well.
- Add wet ingredients, whisk and mix well.
- Cook shrimp and pork belly (or Vegan Banh Xeo fillings, ex. king oysters mushrooms) over medium-high heat in a non-stick pan.
- Season with salt and pepper and a little ground white pepper. Once cooked through, set aside.
- Lightly oil the non-stick pan again and pour in ¼ batter until it forms a thin layer.
- Add green onions, bean sprouts, Banh Xeo filling, ex shrimp and pork belly or mushrooms.
- At this point, the crepe should be dry (done cooking).
- Check to see if the underside is golden brown.
- Fold in half and plate.
- Repeat until the batter is used up.
- Serve with fresh red lettuce, mint, cilantro, sesame leaves and traditional or vegan nước cham.
Notes
Serve with a deliciously Spicy Vietnamese Vegan Fish Sauce Nuoc Cham Dipping Sauce.
