Sushi Hachi Richmond 鮨八 only opens 5 days a week. Tuesday to Saturday 6pm to 9pm. Reservations are a must. We recommend the bar seat simply because we like watching the chef is action. Also because he makes really really good recommendations. Like to take a salmon sushi with salt and lemon juice. Yes! You have to try this. Much like how you must try Sushi Hachi Richmond. Now run! Sushi Hachi Richmond, or 鮨八 is operated by an older couple. The Chef plays golf and opened this sushi restaurant as a passion project. Sushi Hachi has a focused dinner menu. Premium fish with quality ingredients. There is not many cooked food items simply because they do not have a full scale kitchen.
The fish selection here is good with madai, flounder, aji and other daily specials. Because sometimes ordering salmon and tuna is BORING. Sushi Hachi Richmond has really fresh fish. There is a glossy sheen sparkle from each piece. There is a sweet liveliness to the fish. Hachi Sashimi Chirashi Don is $25 is worth every penny. The sushi rice is delicious. To make the best sushi rice you need to choose right, measure right, cook it right, take out the rice ex. don’t leave it in the cooker too long, season the rice. Must of all – do not use left over rice. Hachi Sashimi Chirashi Don had wild salmon, fatty toro, hamachi, aji, ika, kampachi, skipjack tuna, flounder and tamago. Tobiko was sprinkled on the rice.
Tonight I died and went to Uni Heaven. Sushi Hachi 鮨八 had live uni on special for $18. Sushi Hachi has the best sea urchin! The uni was super creamy and did not have that fishiness. Yet you can still taste the ocean.
BBQ salmon neck was a tad dry and over-cooked. It was not fatty enough compared to Matoi Sushi Coquitlam. It was understandable because it was the neck and not the fatty belly.
Negitoro Sushi and Toro sushi: The negitoro is tasty with buttery toro and savory chives. Toro sushi was also melts immediately.
We ended the night with Hotate Sushi. Scallop sashimi is sweet by nature and makes a great dessert. Only complaint? I was the pieces were thicker. Sushi Hachi is truly one of the best Japanese restaurants Richmond has to offer. Don’t forget to order their ikura and saba battera sushi next time you go.
