In preparation for the upcoming Chinese Lunar New Year, I prepared a refreshing cold appetizer recipe. It is beautiful, celebratory vibrant and easy to make. Pair this Hokkigai Arctic Surf Clams with Ginger and Scallion Cold Appetizer 薑蔥北極貝冷盤 with a Spicy Soy Dipping Sauce 辣椒豉油 for a satisfying finish! Add White Cockle Clams for an added layer of sweet ocean umami flavour.

What Does Arctic Surf Clams Taste Like

Hokkigai Arctic Surf Clams has a meaty texture and sweet flavour, while White Cockle Clams are less briny bivalves.

Both have a soft and firm texture that is super delicious, low fat and high in protein.

Clearwater harvests the clams miles offshore Bedford, Nova Scotia, in pristine deep and cold clear Canadian water. The clams come on board the vessel is quickly steamed to loosen the meat (and to lock-in that vibrant colour); the meat is then taken out, and it is immediately flash frozen at sea. It then goes to the factory to be processed and graded before being shipped around the world. 98% of is headed to Asia and Japan for the sushi and sashimi market.

  • Simply defrost under running cold water.
  • Slice and cut on the bias into halves and clean off the stomach part.
  • Place the clams and lime slices in ice water for 5 minutes. By placing the clams with lime slices accentuates the faint sweet flavour.
  • Remove from water and pat dry.

How To Prepare Hokkigai Cold Appetizer 薑蔥北極貝冷盤

  • Julienne green onions and ginger.
  • Toss in Arctic Surf Clams and Cockle Clams sashimi in a large mixing bowl.
  • Lightly drizzle sesame oil. Mix well.
  • Plate and set aside.

How to Prepare Spicy Soy Dipping Sauce 辣椒豉油食谱

  • Julienne green onions and ginger.
  • Finely chop birds eye chilli. Remove seeds if you prefer it to be less spicy.
  • Add green onions, ginger, bird’s eye chilli, and sugar to a small dipping bowl.
  • In a small pot, over medium-high heat, simmer neutral tasting/vegetable oil before smoking. The oil must be hot and cooked.
  • Pour cooked oil directly over green onions, ginger and birds eye chilli in the small dipping bowl.
  • Add steamed fish soy sauce into the small dipping bowl.
  • Mix well.
  • Serve and Enjoy.

Ingredients

  • 400g Arctic Surf Clams (Use my discount code “INSTANOMSS10” for 10% off your Clearwater.ca purchase).
  • 400g Cockle Clams
  • 1/2 lime, sliced
  • 3 stalks green onions, julienne
  • 1 thumb ginger (approximately 2 inches), julienne 
  • 3 tsp sesame oil

 

Spicy Soy Dipping Sauce 辣椒豉油

  • 2 bird’s eye chilli, finely chopped and seeded
  • 1 stalks green onions, julienne
  • 1 thumb ginger (approximately 1/2 inch), julienne 
  • 1/2 tbsp sugar
  • 1/2C vegetable oil
  • 1/4C Steamed Fish Soy Sauce (light soy sauce)

Instructions

  1. In a large mixing bowl, defrost Arctic Surf Clams under running cold water.
  2. Slice and cut on the bias into halves and clean off the stomach part.
  3. Place the clams and lime slices in ice water bath for 5 minutes. Placing the clams with lime slices accentuates the faint sweet flavour.
  4. Remove from water and pat dry.

  1. Toss in Arctic Surf Clams and Cockle Clams sashimi in a large mixing bowl.
  2. Add in julienne green onions and ginger.
  3. Lightly drizzle sesame oil. Mix well.
  4. Plate and set aside.

 

How To Prepare Spicy Soy Dipping Sauce 辣椒豉油

  1. In a small dipping bowl, add julienne green onions, ginger, finely chop birds eye chilli and sugar.
  2. In a small pot, over medium-high heat, simmer neutral tasting/vegetable oil before smoking. The oil must be hot and cooked. 
  3. Pour cooked oil directly over green onions, ginger and birds eye chilli in the small dipping bowl. You will here a sizzle sound and see bubbles.
  4. Add steamed fish soy sauce into the small dipping bowl.
  5. Mix well.
  6. Serve and Enjoy.


Notes

  • You can defrost and prepare clams one day ahead and store in the refrigerator.

Don’t get me wrong! I love a good burger, especially a good plant-based burger! I used Impossible Foods plant-based patty for a healthier vegan burger with Israeli salad. This mouthwatering Vegan Burger with Israeli Salad is bright, balanced and beautiful!

VEGAN BURGER WITH ISREALI SALAD

I loosely adapted Chef Justin Cucci from Linger in Denver, Colorado, USA. His sliders with Israeli Salad and Hummus called for a lot of ingredients that I didn’t have readily at home.

I improvised and swapped out the hummus for labneh; Montreal steak seasoning for Za’atar; slider Hawaiian rolls for regular buster buns. I also used a lot of cilantro instead of dill and mint. I also used Smak Dab’s honey horseradish mustard for my substitute for stone-ground dijon mustard. I love how all the Middle Eastern flavours come together!

But you know what? It tasted freaking amazing!

Isreali Salad

How to Make Israeli Salad

In a small mixing bowl, add Sherry vinegar (red wine vinegar works also), minced shallots, sugar, mustard, salt, and ground black pepper to make the vinaigrette. Mix well until emulsified and homogenous.

In a medium mixing bowl, Add thinly sliced cucumber, diced tomatoes, thinly sliced red onions, fresh cilantro, mint and dill, vinaigrette and toss together. Set aside.

How to Make Hummus

In a Vitamix or food processor, combine chickpeas, tahini, lemon juice, olive oil and seasoning. Blend until smooth. Set Aside.

If you do not require the burger to be 100% vegan, labneh also makes a good substitute for hummus.

Vegan Burger with Isreali Salad

How to Make Vegan Burger with Israeli Salad

Divide a package of Impossible Burger patty approximately 6 oz or 170g and shape into patties. Season both sides with Za’atar seasoning or Montreal steak seasoning.

In a non-stick pan, over medium high heat, add olive oil and sear the patties on each side until a crust forms. Approximately 1 and half minutes.

Top each patty with cheese or vegan cheese and cover the pan until the cheese melts. Approximately 30 seconds.

While the patties are cooking, toast a brioche bun.

Spread about 1 tablespoon of hummus or labneh on the bottom of each bun. Divide avocado slices and add to the bun.

Once the patties are done cooking, transfer them to the bottom buns. Top each burger with 2 tablespoon of Isreali salad. Place the brioche bun tops on top.

If you have extra salad, serve as a side!

Serve and enjoy.

Don’t get me wrong! I love a good burger, especially a good plant-based burger! I used Impossible Foods plant-based patty for a healthier vegan meat alternative burger with Israeli salad. This mouthwatering Vegan Burger with Israeli Salad is bright, balanced and beautiful!

Ingredients

Hummus

  • 1 can (455g) chickpeas, drained and rinsed
  • 3/4C tahini
  • 1/2C fresh lemon juice
  • 1 tsp kosher salt
  • 2 tsp olive oil

 

Isreali Salad

  • 1 tbsp red wine vinegar or Sherry vinegar
  • 1 shallot, minced
  • 3/4 tsp sugar
  • 1/2 tsp Dijon mustard
  • salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cucumber, thinly sliced
  • 1 small tomato, diced
  • 1 small red onion, thinly sliced
  • 1 sprig fresh dill, rough chopped
  • 1 spring fresh mint, rough chopped
  • 1 sprig fresh cilantro, rough chopped

 

 

Burger Patties

  • 1 package (340g or 12oz) Impossible Burger Patties or meat-alternative burger patties
  • 2 tbsp Za’atar seasoning or Montreal Steak seasoning
  • 2 brioche burger bun
  • 1 avocado, peeled, pitted and thinly sliced
  • 1C Havarti Cheese, shredded

Butternut Squash Soup

It is butternut squash season! Time to whip up lots of healthy and delicious recipes like this Easy Butternut Squash Soup! This nutrient-dense autumn vegetable is an excellent source of fibre, calcium, magnesium and Vitamins A, C, E and B. Just three tablespoons of cooked butternut squash counts as one of your five a day!

Cutting and peeling your butternut squash can be easy. The skin is not edible, but you can roast it with the skin and scoop the flesh out when soft. Alternatively, as a shortcut, you can always buy pre-cut diced frozen butternut squash. However, I would suggest using in-season produce whenever possible! It just tastes that much better!

I love the cozy smell of cooking this butternut squash soup as it fills the kitchen with sage, rosemary.

Sometimes, I will include coconut milk, lemongrass and some red curry spices when I’m craving something tangy and a little spicy! Other times, I will crave a more traditional basic version that is baby and toddler friendly! Either way, it is delicious!

This all-veggie vegan butternut squash soup is healthy, creamy, nourishing and ideal on cold autumn days when you want something simpe and healthy.

To give it an extra boost of a nutritional punch, I used Organika’s Veggie Broth for my soup base! This vegan-friendly protein is a harmonious blend of natural organic vegetables, adaptogenic tremella mushroom and nutritional yeast, L-Glutamine, Potassium, calcium, iron and B vitamins that are worth sipping.

Alternatively, you can use chicken stock if you prefer. Organika Chicken Bone Broth is made with cage free organic fed chickens with no additives, no antibiotics or hormones added.

How to Make Butternut Squash Soup

Choose a medium butternut squash that is approximate 3 pounds—peeled and dice.

Chop the onions, shallots, garlic and ginger. If you like, you can add a carrot or a red pepper too! – this will also give the soup a lovely orange hue.

Fresh vs Dried Herbs – I always prefer to use fresh herbs whenever possible. The same goes with fresh in season produce vs frozen. Dried sage and rosemary works equally fine.

Heat oil in a large pot over medium heat.

Once hot, add onions, shallots, garlic and ginger and simmer over low-medium heat until onions become translucent.

Add in butternut squash and cook until it softens.

Season with salt and pepper and herbs.

Pour in broth and bring to boil, and then reduce heat to low. Cover the pot and simmer for 15 minutes or until butternut squash becomes fork tender.

Remove from heat and transfer to a Vitamix blender or use an immersion blender. Blend on high until creamy and smooth.

Pour into bowls and garnish with chopped cilantro, chilli pepper flakes and chopped cashews!

Description

It is butternut squash season! Time to whip up lots of healthy and delicious recipes like this Easy Butternut Squash Soup! This nutrient-dense autumn vegetable is an excellent source of fibre, calcium, magnesium and Vitamins A, C, E and B. Just three tablespoons of cooked butternut squash counts as one of your five a day!

Ingredients

  • 1 medium butternut squash approximately 3 pounds, peeled and diced
  • 2 tbsp olive oil
  • 1 yellow onion, chopped
  • 1 carrot, chopped (optional)
  • 1 red pepper, chopped (optional)
  • 5 clovers, garlic, chopped
  • 1 thumb ginger, sliced (approximately 2 inches)
  • 3 tbsp Organika Veggie Broth (or Organika Chicken Bone Broth, or your choice of stock)
  • 3 cups water 
  • 1 tbsp fresh sage (or dried sage)
  • 1/2 tbsp fresh rosemary (or dried rosemary)
  • 1/2 tsp celery salt
  • 1/2 tsp black pepper

 

For Garnish

  • 1/2 cup cashews, chopped
  • 1 bunch cilantro, chopped
  • dash of chili pepper flakes

Instructions

  1. Choose a medium butternut squash that is approximate 3 pounds. Peeled and dice.
  2. Chop the onions, shallots, garlic and ginger. If you like, you can also add a carrot or a red pepper too! This will also give the soup a nice orange hue.
  3. Heat oil in a large pot over medium heat.
  4. Once hot, add onions, shallots, garlic and ginger and simmer over low-medium heat until onions becomes translucent.
  5. Add in butternut squash and cook until it softens.
  6. Season with salt and pepper and herbs.
  7. Pour in broth and bring to boil and then reduce heat to low. Cover the pot and simmer for 15 minutes or until butternut squash becomes fork tender.
  8. Remove from heat and transfer to a Vitamix blender or use an immersion blender. Blend on high until creamy and smooth.
  9. Pour into bowls and garnish with chopped cilantro, chili pepper flakes and chopped cashews!
  10. Serve and enjoy!


Notes

  1. Fresh vs Dried Herbs – I always prefer to use fresh herbs whenever possible. This goes the same with fresh in season produce vs frozen. Dried sage and rosemary works equally fine.
  2. Store in refrigerator up to 4 days or up to 1 month in the freezer.

Mission Hill Winery Estate located heart of British Columbia’s breathtaking Okanagan Valley wine country is must for anyone visiting Kelowna for the first time. This trip was one that I will always remember and hold dear to my heart. The breathtaking scenery provides a great place for you to take refuge from the busyness of daily life and escape for while with a delicious glass (or bottle, we don’t judge) of wine. We came here on our second day of our Summerland road trip. After travelling from Vancouver and pre-drinking before at Sumac Ridge Estate Winery, we didn’t want to leave this beautiful place. We made sure we made dinner reservations at the Mission Hill Terrace Restaurant for dinner later that evening.

Remember to book your reservations in advance on the Mission Hill Winery Estate website as there are limited spaces. We chose the Discovery Tour which began with an introduction to viticulture at Mission Hill and its importance in winemaking. Tour begins in the vineyards, followed by our winery film, architecture highlights and a visit to our underground Barrel Cellar. In the end, guests will enjoy an extensive tasting of 4 award-winning wines and a $5.00 gift voucher for our Wine Shop.

After all the wine tasting and touring I was ready to spend my $5 voucher and indulge on flights. 3 for $10 or any single for $4. If you purchase two bottles from the selected list, you can enjoy one tasting also. I really enjoyed their 06 SLC Chard and their SLC Syrah.

It is VERY IMPORTANT to keep the cheese and crackers you purchase close to you. There are many guests whom thinks it is free and communal and start reaching into your purchased food. Most are probably already intoxicated from the wine tour and wine tasting where common sense and mannerism is throw out the door.

And after all that wine drinking you can join us at the Mission Hill Terrace Restaurant to indulge in some seafood and steak.
