Silkie Chicken Cordyceps Fish Maw and Conch Soup 蟲草花花膠响螺煲烏雞湯 is not only rich in amino acids but also contains a variety of essential nutrients for the human body! 烏雞 Silkie Chicken - What is a Silkie, Silky or Chinese Silk Chicken? It is a plumage with a white fluffy silk and satin feathers but with black skin and bones!
Similar to squab, silkie chickens contains high nutritional value, low-fat and many essential amino acids. It can alleviate the human deficiency of Qi and blood. Silkie chicken is good for the liver and kidney, the vitality of skin cells, improve memory, reduce blood pressure, improve skin elasticity and longevity. 淮山 / 山藥 Dioscorea polystachya – Commonly referred to as Chinese yam, Huai Shan has a sweet neutral characteristic. Individuals with spleen deficient 脾虚 will find improvements in their digestive system. It promotes urination and inhibit gastric cleansing properties. Huai Shan targets kidney, lung, and spleen channels 腎﹐肺﹐脾. It can also help to reduce blood sugar and blood pressure, improves antibodies, is anti-inflammatory, anti-aging and improves vitality.

花膠 Fish Maw - Sweet and neutral in nature. It targets the liver and kidney meridian and has the effect of moisturizing and nourishing skin, Yin and the internal organs. Fish Maw is high in protein, rich in collagen and improves vitality.

枸杞子/ Goji Berries (Lycium Chinense) – In TCM, the Goji Berry is typically used to nourish the blood, tonifies the Yin by entering the kidney and liver channels. This wonderful tonic herb promotes longevity, anti-ageing, brightens the eyes and moistens the lungs. Goji berries help treat anemia insomnia, tinnitus, diabetes and impaired vision such as glaucoma. Goji Berries are also known as Matrimony Vine Fruit, for its aphrodisiac effect! For Western culinary, try adding goji berries to your oatmeals or energy raw bars.
Wolfberry Berries are rich in polysacharides, betaine, sesquiterpenes, vitamin A, B-1,2, C, calcium, phosphorus, iron, zeaxanthin, physalein, and linolein acid. Warm-type constitutions.

桂圓肉/ 龍眼 Dried Longan – Longan meat is used to address blood deficiency in the heart and spleen. The heart controls a person’s mental well-being, including the quality of sleep. Blood deficiency can give rise to Qi deficiency. In TCM, blood produces Qi, and Qi promotes the circulation of blood. Rich in calcium, phosphorus, iron and organic acids.
桂圓肉味甘,開胃健脾,補虛益智 保心血,潤五臟,治怔忡。滋補養血安神。女性在產後調補也很適宜。
Cordyceps Mushrooms (蟲草花, Chóngcǎo huā) - Cordyceps (Cordyceps Militaris) is another type of mushroom prized for its fantastic health benefits for centuries. These adaptogen fungus have a savoury, umami flavour with an earthy, nutty taste. The fruiting bodies of cordyceps sinensis have a vertical, finger-like appearance. Cordyceps flower is mild in nature, neither cold nor dry. It nourishes the lungs and kidneys, improves essence and Qi, benefits Yin and moisturizes the skin.

Most dry goods ingredients, tools and supplies can be purchased at your local Asian markets and Chinese grocery stores or Amazon Online.
HOW TO MAKE STEWED SILKIE CHICKEN SOUP
You can purchase whole Silkie Chicken at your local Asian supermarket, either fresh or previously frozen. Remember to wash and remove the inners, head and tail. If there are any leftover feathers, pluck those too! You may choose to remove the skin as well for a healthier option for less oil.
Wash and rinse the Chinese herbs. I also recommend soaking the herbs in water for at least 20 mins to remove any sulfur used during the sulfur fumigation process (replacing traditional sun-drying for its pesticidal and anti-bacterial properties.) Just in case.
In a pot of boiling water, blanch the silkie chicken and pork tenderloin to remove impurities for about 5 minutes. Then rinse under cold water.
Place all your ingredients in a 1 L stewing pot. I like to use an electric stewing pot to keep the nutrition and original taste of food without checking the stove. I can even go take a nap!
Add approximately 1L of water (or appropriate amount, so it does not overflow).
In medium heat, stew for 3.0 hours. Longer if you want a more intense flavour.
Add a dash of salt approximately 10 minutes before consuming.
Serve and enjoy!

主料: 烏雞、蟲草花、花膠、響螺、瘦肉 、幹響螺片、新鮮響螺頭 、杞子、淮山、生薑

Ingredients
- 1 whole Silkie Chicken 烏雞
- 1 lb Pork Tenderloin 瘦肉
- 50g Cordyceps 蟲草花
- 1 piece dried conch 幹響螺片
- 5-6 pieces fresh conch 新鮮響螺頭
- 50g dried Goji berries 枸杞
- 100g Chinese Yam 淮山 / 山藥
- 8 pieces Logan 桂圓
- 2 Slice Ginger 生薑
- dash of Salt 鹽
- 1L water 水
Instructions
- Wash and rinse the ingredients. Soak the herbs in water for at least 20 mins
