    I drink this soup periodically, all day, whenever I feel bloated or just want a little gentle cleanse. This Tomato Tofu Soup Chinese recipe has only 5% carbohydrates, 61% protein and lots of healthy fats!

    What is a Keto Diet?

    The Keto diet requires you to eat under 5 percent of your daily calories from carbohydrates. 5% carbs is approximately 20-50 grams of carbohydrates for most people.

    The remaining amount calories is distributed to 60 to 90 % fat and 10 to 30 percent protein.

    This reduction in carbohydrates puts your body into a metabolic state called ketosis. Your body then burns fat for energy, turning fat into ketones in the liver and supplies energy for the brain. Keto diets reduces blood sugar and insulin levels.

    Keto diets requires you to micro-mange your macronutrients aka macros.

    What is Lazy Keto?

    Lazy keto is great for people that do not want to count calories and is focused on eating no more than 20 grams of carbohydrates per day without the need to count calories or track other macronutrients, protein and fat!

    This is perfect for lazy dieters like me!

    Warm up Your Diet

    Although raw fruits and vegetables are usually considered beneficial, eating too much raw fruits and vegetables causes cold energy according to Traditional Chinese Medicine. Over consumption of raw foods promotes chilliness, mucus, congestions, abdominal pain and bloating.

    While I like a nice green leafy salad every now and then, I almost always prefer a hot bowl of soup any day!

    Health Benefits of Tomato Tofu Soup

    Tofu is rich in protein but low in calories. 

    Tomatoes has anti-inflammatory properties, is a good source of potassium and is linked with lowering the elevated blood pressure in the body. Thus, preventing cardiovascular diseases! Every 100g only contains 18 calories!

    Shimeji Mushrooms for some extra protein and healthy copper, B vitamins, potassium and zinc. You can use any mushrooms that you like basically. You don't need to only use Shimeji. King oyster mushrooms or enoki mushrooms are equally delicious!

    Add low sodium veggie broth to keep water retention at bay! 

    Add an egg (whisked for egg drop), if you are not vegan and want to feel extra full. Eggs are nutrient rich and a good source of Omega-3s!! 

    Yam Noodles: Delicious and bouncy. For every 100g there is only 1g NET carbs (!!), 0 cholesterol, 0 fat!! Totally Keto friendly!

    Ingredients

    Scale
    • 3 Large Tomato, diced 蕃茄 切粒
    • 1 medium onion, diced 洋蔥 半個切粒
    • 5 cloves Garlic, minced 蒜 適量切粒
    • 2-3 slices of Ginger 薑片 適量
    • 3 tbsp Olive oil 橄欖油 3湯匙
    • 150g Shimeji Mushrooms 鴻喜菇 150克
    • 400g Tofu (firm) 豆腐 400克
    • 250g Yam Noodles 芋絲 250克
    • 3 tsp Vegetable Bouillon (reduced sodium) 低鈉濃湯粒 3茶匙
    • 2 Egg, whisked 蛋 攪打 (optional)
    • 1 tsp white pepper 白胡椒粉 1茶匙
    • 1L water 水 1公升
    • dash of salt 鹽 適量

    Instructions

    1. Wash and prep your vegetables and tofu.
    2. In a medium stock pot, add olive oil over medium high heat. Once hot, add in minced garlic, onions and sliced ginger.
    3. Add in Tomatoes and cook until soften.
    4. Add in water, vegetables bouillon, ground white pepper, tofu, Shimeji mushrooms and bring to a boil.
    5. Add in yam noodles and pour in whisked egg for your egg drop. Stir and mix well.
    6. Serve and enjoy!

     

    蕃茄鴻喜菇豆腐湯的做法步骤:

    1. 加入适量油入锅中加热。
    2. 爆香蒜。
    3. 放入洋葱和蕃茄煮至八分熟。
    4. 加入鴻喜菇, 豆腐, 生姜和冷水一起下锅煮沸。
    5. 加入芋絲和蛋花。
    6. 加两片蔬菜点缀一下,加入盐、低鈉濃湯粒调味即可出锅。
