Between December 8 - 10, Sabores CDMX events and Mexico City Flavor will see three of Mexico City’s top chefs take over the kitchens of three Vancouver restaurants: Chef Andrea Carlson’s Burdock & Co. will host Chef Mario Espinosa; Cacao’s Chef Jefferson Alvarez will cook with Chef Gerardo Vázquez Lugo; and Chef Tret Jordan will share the kitchen at Homer Street Cafe and Bar with Chef José Manuel Baños.
SABORES CDMX - Mexico City Flavors is a Food Festival seeking to promote the current and growing Gastronomic movement that's happening in our city to international enthusiasts.
It is focused on providing a unique culinary experience showcasing the best of traditional and contemporary Mexican Cuisine, bringing our most influential and trendy Chefs to your city.
Our ultimate goal is to catch the attention of the people in the cities we visit, and to encourage them to start their own dining experience in Mexico City.
About the Chef
Chef Mario Espinosa of La Encomienda Polanco was born into a family of cooks, and began his career in the kitchen where his father worked as a chef. In 2005 he began working in kitchens under Chef Enrique Olvera, known as one of the world’s best chefs. Chef Espinosa has made a name for himself as a consultant, corporate chef, and as the owner of K’u’uk, named Travel & Leisure’s Best New Restaurant of 2013. He now oversees the kitchens of Rosa Sur 32º and Mexico City’s La Encomienda, where he specializes in regional ingredients cooked by traditional methods.
I'm so glad that the snow storm hadn't ruined our intimate evening at Burdock & Co. We started the evening with a few cocktails and and Naturalist wines. For those of you looking for a non-alcoholic beverage, option for the refreshing and fragrant Lavender's Blue - lavender and hibiscus flower, lemon, grapefruit and hops bitters, sparkling water. Yes, you can even ask about adding some gin!
Grilled beets and potatoes: a warm and earthy salad with fresh grilled beets, creamy pumpkin seed Sikilpak, aged cheese and a hint of chilli spice.
Short Ribs in Recado Negro: this tender fall of the bone short rib is glazed with charred chiles mole. It is also served with three traditional Mexican sauces: pico de gallo, xnipec (roasted tomatillo salsa) and borracha.
Sweet Potato Puree: a warm dessert with sweet potato puree, star anise, prickly peanuts and served with cinnamon ice cream. Flavors reminds me of a nice silky chai latte.
