Ingredients
- 1 bag of Little Potato Company Blushing Belle Potatoes (each about 1.5 inches diameter)
- 3 slabs of Alderwood Smoked Bacon
- 1 cup Sour Cream or Creme Fraiche
- 2 Tablespoons Olive Oil
- 4 Tablespoons chopped chives
- Dash of sea salt
- Dash of cracked black pepper
- Optional ½ cup coarsely grated Parmigiano Reggiano
Instructions
- Preheat oven for 450 degrees, line baking tray with tin foil.
- Wash and pat dry Creamer Potatoes.
- Cut potatoes in half. With a large bowl, coat the potatoes with olive oil.
- Cut bacon, and finely chop chives.
- Lay potatoes with skin side down on baking tray, while placing bacon on top of potato.
- Insert into oven, and bake for 15 minutes
- Remove from oven and let it rest for 5 minutes
- After potato and bacon have cooled down a bit, apply sour cream on top of the bacon and potato.
- Sprinkle chives on top of the sour cream or creme fraiche
- Sprinkle some sea salt, cracked black pepper, and cheese on top.

The idea behind this easy party finger food idea is my love for double baked potatoes. Twice baked potato is a popular “side dish” in a steakhouse. The problem with that is it’s gigantic and too filling. So why not take this favorite appetizer and make it into a bite size double baked potato party food?!
The elements of a double baked potato are simple. The potato should be soft and creamy. We like using Little Potato Company Blushing Belle potatoes. The Alderwood smoked bacon should be crispy. Twice backed potatoes should be served with sour cream and finely diced chives as garnish. Before you start to wonder why there is no salt; the flavors from both the bacon and sour cream will add enough flavor for the overall snack. If you must, sprinkle some sea salt lightly as a garnish.
