If you love Peruvian cuisines than you would love what Cacao Progressive Latin offers. We were super excited for Chef Jefferson Alvarez’s trip to Peru because we knew he would come back with some goodies. Between March 2 to 7, Cacao will host an amazing dining event: Memories of Peru.
The tasting menu welcomes you with a true Peruvian style Pisco Sour. Mixologist Sergio Grandolfo uses an Angostura from Peru that has a more floral nose and heightened bitter after taste. Traditional angostura bitters are more syrupy with a faint scent.
Appetizer finger snacks include:
- cachapa & cheese
- chicharron and El XO (Latin version of XO sauce made with Argentina ants and scallops)
- anchovy churro (this wildly reminds me of these snacks from Japan)
Sunchoke and Quinoa with Inva Leaf
Sea Urchin Custard with tapioca and cancha
Ceviche: leche de tigre and cancha. Imagine this filled in a poke bowl.
Bransino: Kawicha salad. We loved the bright flavours and crispy fish skin!
Wild Boar with salsa Huacatay, squash puree and dehydrated cilantro.
Mamey Mousse: Cacao nibs Maca sponge. Mamey fruits has the color of papaya and the creaminess of bananas.
Cacao Ball with fruit jelly. Can I order a dozen of these to go?
We hope you had chance to enjoy this delicious tasting menu! $65 per person. The stuff is pretty amazing and loaded with a lot of deeply flavourful sauce and textures.
