Easy Homemade Strawberry Vinaigrette Salad Dressing beats store-bought any day! This low-calorie, quick and easy strawberry vinaigrette recipe made with fresh strawberries, apple cider vinegar and olive oil is the perfect way to enjoy your favourite leafy greens.

Instructions

  1. Add baking soda to cold water and soak the strawberries in a large bowl for 5 minutes. It would be even better to cover and shake it a few times.
  2. Rinse and pat dry fresh strawberries with a kitchen paper towel.
  3. Alternatively, soak and wash the fresh strawberries with a fruit and veggie spray like this one.
  4. De-stem the strawberries and remove the core with a strawberry huller or a sharp pairing knife.
  5. Add all ingredients (except the oil) into a food processor and blend until smooth.
  6. Stream in the oil and pulse until mixed and thickened.
  7. Carefully remove the blade from the food processor(!!)
  8. Pour salad dressing into an airtight glass jar.
  9. Add your favourite salad greens, such as arugula, baby spinach or spring mix, in a salad bowl.
  10. I highly recommend investing in a quality salad spinner. Drying your veggies thoroughly is so important after they are washed. It helps prevent wilted herbs and vegetables and stays fresher and longer!
  11. Drizzle on Strawberry Vinaigrette.

  1. Strawberry Salad Dressing with a velvety emulsified extra virgin olive oil can be meal prepped beforehand. Store the remaining vinaigrette in the refrigerator in an airtight glass bottle container for up to 4 days.
  2. Shake well before serving with your favourite salad. It's seriously fresh, vibrant and fruity.
