Steamed Chicken with Cordyceps Mushrooms and Black Goji 黑枸杞蟲草花蒸雞

Steamed Chicken with Cordyceps Mushrooms and Black Goji 黑枸杞蟲草花蒸雞 is a straightforward and juicy dish. This Traditional Chinese Medicine recipe boosts the immune system, and succulent, tender chicken meat is perfect in the winter. It is easy to cook a one-pot rice cooker meal or steamed stovetop for 30 minutes.

  • 100g Cordyceps Flowers
  • 50g Black Goji Berries
  • 3 Fresh Ginger, julienne or sliced
  • 1 lbs Taiwanese Chicken, opt for a whole chicken, chicken wings, or chicken thigh cut into small pieces

Instructions

  1. Pick off the roots of the cordyceps flowers.
  2. Give the mushrooms a quick wash and rinse with cold water. Drain well.
  3. Pat dry with a kitchen paper towel. Set aside
  4. Rinse Black Goji Berries and drain well. Set aside.
  5. Clean the chicken pieces and pat dry with a paper towel.
  6. Marinate the chicken for at least 20 mins with grounded white pepper powder, oyster sauce, light soy sauce, dark soy sauce, Shaoxing cooking wine, brown sugar, and a dash of salt.
  7. Add the marinated chicken pieces to a deep dish. Layer on cordyceps flowers and black goji berries. Add at this point if you plan on including shiitake mushrooms or black fungus.
  8. Wash white jasmine rice and add to the rice cooker.
  9. Place a trivet rack stand inside the rice cooker to raise the plate off the bed of rice. Alternatively, I prefer to steam in my convection oven for 30 minutes for convenience.
  10. To steam chicken together with the rice, select normal rice cooking mode. Do not select Turbo mode.
  11. Remove the chicken from the rice cooker after it is done cooking. The chicken will come out with a nice orangey tint.
  12. Rest for a few minutes.
  13. Garnish with cilantro and or finely chopped green onions.
  14. Serve hot white rice.

Next time, buy extra cordyceps mushrooms and make an easy Stir Fry Cordyceps or turn it into a nourishing bowl of Wild Matsutake Morel and Cordyceps Mushroom Soup. It's super delicious and takes a little time to prepare!
