雪梨蘋果海底椰玉竹無花果湯 Moisturizing Chinese Apple Sea Coconut Soup is sweet and packed with nourishing benefits of Traditional Chinese Medicinal food therapy. Suitable for all ages, this sweet soup helps moisten the lungs, calms the mind and reduces coughing and phlegm. It is the perfect soup as we enter into Autumn Equinox.

Ingredients

  • 2 Whole Apples 蘋果
  • 2 Whole Snow Pears 雪梨
  • 4 Fresh Figs or Dried Figs 無花果
  • 50g Sea Coconut (Lodoicea maldivica) 海底椰
  • 50g Apricot Kernels 南北杏
  • 50g Dried Lily Bulbs 乾百合
  • 50g Dried Lotus Seeds 蓮子
  • 50g Polygonatum Odoratum 玉竹
  • 1 lbs Pork Shank 豬展 Pork Tenderloin 瘦肉

Instructions

  1. Wash and rinse Chinese herbs and dry ingredients.
  2. Soak the herbs for 20 minutes in a small bowl to remove traces of impurities. This will help remove dust and debris. Rinse and set aside in a small bowl.
  3. Wash apples and snow pears and pat dry with a kitchen paper towel. You do not need to peel the skin if you prefer not to. I like to peel the apple skin and the snow pear skin because I am afraid of pesticides.
  4. Peel, core and cut apples and snow pears into chunks. Cut the chunks into smaller or large ones, depending on the pot size.
  5. Parboil the pork shank or tenderloin in a medium pot to remove the impurities. Rinse with cold water. Set aside.

Double Stew Method

  1. I typically double-stew my Chinese dessert soup recipes in the Buydeem Health Beverage Maker. It is easy to use, and I do not need to watch the water boils for long hours of cooking time.
  2. Simply put all the ingredients into the stew pot and fill the main kettle with 1.5 litres of water.
  3. Turn on the "soup" function. It is automatically set to 90-minute intervals.

Stovetop Method

  1. If you cooking this sea coconut soup over the Stovetop.
  2. Add all the ingredients into a large pot not made of stainless steel like this Perfect Pot. Although not all Chinese herbs react with metal, it is best not to use a metal pot when making Chinese medicinal herbal soups.
  3. Cover ingredients with cold filtered water and boil at high heat.
  4. Once the hot water is boiling, reduce heat to low heat and continue cooking for 90 minutes.
  5. Enjoy this hot. The soup ingredients are perfect for eating a side dish too! The cooked pork shank goes perfectly with some Chinese Chili Soy Dipping Sauce.
