Eat this high fiber vegetable soup without the hanger pangs of fad diets!

Ingredients

  • 1/2 head of cabbage, chopped
  • 4 Celery Stalks, diced
  • 1 Medium White Onion, diced
  • 2 Medium Carrots, diced
  • 1 Red Bell Pepper, diced
  • 4 Roma Tomato
  • 3 Cloves of Garlic
  • 4 C Chicken Broth, Vegetable Broth or Drinking Water
  • 14 oz can basil, oregano, garlic diced tomatoes
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp red pepper flakes
  • Kosher Salt and Black Pepper to taste
  • 1 tbsp Olive Oil

 

Optional

  • Fresh Ginger
  • Paprika Powder, season to taste
  • Curry Powder, season to taste
  • Tumeric Powder, season to taste
  • 1 Can Crushed Tomato

Instructions

  1. Wash and pat dry vegetables with a kitchen paper towel. Rough chop the vegetables. Set aside.
  2. Add 2 tablespoons of olive oil to the Instant Pot and set to "Saute" mode. This would be equivalent to medium high heat on the stovetop.
  3. Once the oil is hot, add minced garlic or cloves of garlic and onions. Sweat the raw onions and let fragrant for 2-3 minutes.
  4. Add non-fat, unsalted chicken broth. Substitute with vegetable broth or cold drinking water if you prefer a vegan 7-Day Cabbage Soup Diet.
  5. Add the remaining ingredients and herbs, such as cabbage, celery, carrots, tomatoes, green bell peppers, and seasoning. Dried basil, dried oregano, and dried bay leaves are the best herbs for vegetable soup. Add salt and ground black pepper to taste.
  6. Close the lid, set the pressure cooker to high pressure for 10 minutes, and let it naturally release pressure. If you are in a hurry, you can opt for a quick release.
  7. Stovetop Method: Boil for 10 minutes until all the vegetables are tender. Then reduce heat to low-medium and simmer a further 5 minutes.
  8. After the pressure valve drops, remove the lid.
  9. Taste the cabbage diet soup and adjust it with salt and black pepper if desired.
  10. Serve and enjoy!

Notes

For vegan wonder soup, omit substituting vegetable broth or water with chicken broth.
