Fresh Spicy Mango Salsa Recipe is a crowd-pleasing vegan snack with vibrant colors and vitamin C. This sweet and spicy take on a chunky salsa is a perfect balance made with fresh mango, zesty lime juice, jalapeño pepper, and red onion and pairs perfectly with your favourite shrimp tacos, chicken wraps or your healthy meal prep for the week!

Ingredients

  • 2 Fresh Whole Mango, small chunks
  • 2 Roma Tomatoes, diced
  • 1/2 Red Onion, finely chopped
  • 1 Red Pepper, finely chopped
  • 1 Jalapeño Pepper, finely chopped, seeds removed
  • 2 Cloves Garlic, minced
  • 1 Fresh Lime, juiced
  • 1/2 C cilantro, finely chopped
  • Salt and Pepper to taste
  • Red Pepper Flakes to taste

Instructions

  1. Wash and pat dry fruits and vegetables with a kitchen paper towel.
  2. Cut whole mangoes into small chunks.
  3. Cut the rest of the ingredients (tomatoes, red onions, jalapeño peppers, cilantro and garlic) into small pieces.

  5. Add all the Mango salsa ingredients into a large mixing bowl.
  6. Squeeze fresh lime juice and add a dash of salt and pepper and red pepper flakes.
  7. Mix well and combine.
  8. Serve and enjoy alone, with fish tacos or as a side dish to your favorite main dish!

  1. Roll your lime on the countertop under your hand a few times to help loosen the lime juices. Alternatively, cut the lime in half first, stick a small fork into the flesh and twist.
  2. If you like your fresh salsa recipe extra hot, depending on the spiciness of your jalapenos, don't be shy to add extra diced spicy jalapeno and include the seeds.
  3. If your salsa is soupy and has lots of salsa juice leftovers, don't throw it away! This is the good stuff! Instead, strain it and use it to make spicy Bloody Marys!
