If you have a surplus of summer strawberries, this EASY Macerated Strawberries Recipe is a great way to preserve the sweetness of the strawberries without cooking. It takes two simple ingredients to make a delicious strawberry syrup you'd want to add to all your favourite desserts - fresh strawberries and white granulated sugar.

Ingredients

Scale
  • 250g Fresh Strawberries, de-stem
  • 3 tbsp Granulated White Sugar or Monk Fruit Sugar
  • 2 tsp Fresh Lemon Juice

Instructions

  1. Add baking soda to cold water and soak the strawberries in a large bowl for 5 minutes. It would be even better to cover and shake it a few times.
  2. Rinse and pat dry fresh strawberries with a kitchen paper towel.
  3. Alternatively, soak and wash the fresh strawberries with a fruit and veggie spray like this one.
  4. De-stem the strawberries and remove the core with a strawberry huller or a sharp pairing knife.
  5. If using frozen strawberries, allow time to thaw.
  6. Slice strawberries or cut the strawberries into small pieces by hand or pulse a few times with a food processor.
  7. Mix strawberries with white sugar and fresh lemon juice in a large bowl. Mix well.
  8. Allow the strawberry mixture to rest at room temperature until the sugar dissolves for approximately half an hour.
  9. During the sugar marinating process, the sugar will draw out the soaking fruits' own juices and turn them into a delicious dessert sweet sauce.

Notes

  • You can also freeze macerated berries into ice cubes. I like this ice cube tray with bin best!
  • You can use the defrosted strawberries ice cubes in sparkling beverages or the delicious syrup as a base for salad dressings.
