- 2 Tbsp white miso paste 1 Tbsp rice vinegar
- 2 tsp minced fresh ginger
- ¼ tsp toasted sesame oil Sriracha

- 2 bundles (6½ oz) soba noodles (buckwheat noodles)
- 2 cups steamed greens (broccoli, broccoli rabe, kale, etc.) or packed raw spinach
- Black sesame seeds (optional)
- Minced fresh red Thai chili (optional)
- 4 cups (1 cup per serving) just-boiled water from the kettle, for serving
