Fresh Pineapple Pico De Gallo Salsa recipe is a crowd-pleasing vegan snack with vibrant colors and vitamin C. Ingredients

  • 1 Fresh Whole Pineapple, small chunks
  • 2 Roma Tomatoes, diced
  • 1/2 Red Onion, finely chopped
  • 1 Red Pepper, finely chopped
  • 1 Jalapeño Pepper, finely chopped, seeds removed
  • 2 Cloves Garlic, minced
  • 1 Fresh Lime, juiced
  • 1/2 C cilantro, finely chopped
  • Salt and Pepper to taste
  • Red Pepper Flakes to taste

Instructions

  1. Wash and pat dry fruits and vegetables with a kitchen paper towel.
  2. Cut whole pineapple or pre-cut pineapple without core into small chunks.
  3. Cut the rest of the ingredients (tomatoes, red onions, jalapeño peppers, cilantro and garlic) into small pieces.

  5. Add all the pineapple salsa ingredients into a large mixing bowl.
  6. Squeeze fresh lime juice and add a dash of salt and pepper and red pepper flakes.
  7. Mix well and combine.
  8. Serve and enjoy in a pineapple bowl made from pineapple shells.

  • Roll your lime on the countertop under your hand a few times to help loosen the lime juices. Alternatively, cut the lime in half first, stick a small fork into the flesh and twist.
  • If you like your fresh salsa recipe extra hot, depending on the spiciness of your jalapenos, don't be shy to add extra diced spicy jalapeno and include the seeds.
