Ingredients

  • 全隻雞 1隻 (斬成小塊)
  • 1 bunch cilantro, rough chop 芫茜(香菜)切粒 適量

Marinade 醃料

Instructions

  1. Clean the chicken and remove inners.
  2. Pat dry and rub some salt all over the chicken inside and out. Let air dry for 5 to 10 minutes.
  3. Marinate the chicken for at least 20 mins with grounded white pepper, light soy sauce, dark soy sauce, Shaoxing wine, sesame oil, black truffle oil, black truffle salt and a dash of sugar. Always marinate the chicken with a few slices of ginger and green onions as well.
  4. Steam chicken until juices run clear for about 30 minutes.
  5. Serve and enjoy hot!

 

黑松露蒸雞的做法步骤:

  1. 全隻雞把内脏淘出,冲洗干净,滴干水。
  2. 抹點香油在雞皮上,放涼後斬成小塊。
  3. 加入醃料, 薑片, 蔥, 匀腌制备用。
  4. 醃雞至少20分鐘。
  5. 20分鐘後,將全隻雞蒸30分鐘。
  6. 雞蒸30分鐘後, 加上芫茜。

Equipment

Notes

  • You can use a trivet rack stand to raise the plate.
  • Alternatively, for convenience I prefer to steam in my steam convection oven for 30 minutes.
  • Remove the chicken from the oven after it is steam cooked. Rest for a few minutes. Garnish with cilantro and serve hot.
