Steamed Milk Pudding or Steamed Milk with Two Films 雙皮奶 shuang pi nai is one of the most popular Chinese dessert in Hong Kong. It is generally a steamed milk pudding 炖奶 dun nai. Other names may include steamed milk with egg white, steamed milk with ginger juice, double milk skin, double boiled steamed milk... or however you'd like to fathom the literally translation. Steamed Milk with Two Films is made of milk, egg white and sugar. It can be served hot or cold. I personally prefer hot steamed milk pudding. During our trip to Hong Kong, I was told Australia Dairy Company Hong Kong 澳洲牛奶公司 had the best shuang pi nai. But seeing how it was such a Hong Kong tourist attraction, I believe Yee Shun Dairy Company 港澳義順牛奶公司 is smoother.
For $25 HKD (approx $3 CAD), this was a steal to sit down and relax over some deliciously silky smooth pudding. Similar to a tofu pudding, Yee Shun Dairy Company HK Steamed Milk Puddings are creamier and has a sweetened milk fragrance. With eat bite, I hope that my skin will also be transformed to that of a new born's. So I tried to recreate this at home with a simple steamed ginger milk custard recipe. Many things can go wrong and you will be easily disappointed. Often this milk won't set properly or you will overcook the milk. With this step by step recipe, you will master the two step process of boiling and cooling down the milk.
Of course, like most Hong Kong Cafes, Yee Shun Dairy Company Hong Kong also offers cha chaan teng dishes like creamy egg and ham sandwich. Always toasted. Always no crust. Look at just how juicy this whole egg toast is!
