The Ramenman opened awhile ago in West End of Downtown Vancouver on 841 Bidwell Street. It is Southwest of Marutama, around the bend from Kitanoya Guu with Garlic and Snowy Village. I have wanted to come in for some time now after seeing Sean’s beautiful photos. Finally, we were able to get a seat without any wait.
The restaurant itself seats no more than 20 people: long communal table, bar seats and two 2-top tables in the back with dim lighting. I appreciate the concise menu featuring four ramen and a handful of appetizers (ie. Gyoza and chicken karaage).

Ramen ajitama egg were deceptively smooth and yolky. A perfect soft “boil” 1 hour 63°C egg.
Chicken x Clam 11.75: Comes with your choice of charsui (pork, chicken or one of each). Juicy clams, green onions, red onion, parsley, garlic, black pepper, garlic and truffle oil. The broth itself is buttery smooth with chicken essence and has a creamy mouth feel. I particularly enjoyed that it was not overly salty. The truffle oil itself was faint, perhaps even goes unnoticed.
Chicken x Regular 9.75: Same velvety broth with your choice of charsui (pork, chicken or one of each), ramen egg, bamboo shoots, Japanese leek, green onion, garlic, black pepper, green onion and truffle oil.
I’m excited to come back to try their Vegetarian Broth x Miso. I will however add charsiu and also an ajitama egg. All the meat are sous vide and tender albeit pink to the eye; it is cooked.
