Bright lights, white linen, polished décor… There is four distinct experiences with their 1. Heated outdoor terrace with a view of the city; 2. A sexy bar with an extensive wine-list and delicious rosemary and buttered popcorn; 3. sophisticated fine-dining room featuring two private party rooms (seats 10-12 people); 4. A casual bistro featuring a cozy fireplace. Seasonal changes to their culinary experience focusing on fresh and local seafood – quintessentially West Coast Style.

It was very exciting when world renowed chef Jean-Georges Vongerichten finally opened The Market in Vancouver @ the Shang-ri La Hotel back in 2009! Similarly the Market also opened Market in Boston @ the W Hotel in 2009 and a J&G Steakhouse in Arizona… Don’t expect this super star Chef to be in Vancouver every day… if you’re lucky you may run into him maybe 3 times a year! But you can always come in to rub elbows with some powerhouses in Vancouver!
Your experience at The Market will be considered a “fine-dining” experience – price points for entrees between $20-45. I remember at first before arriving at the resto I expected it to be a lot pricier and more pretentious; this is not so for the quality and ambiance provided. The Three Course Prix Fixe Meal (Fixed Price Lunch Menu for $35 (excludes tax and gratuity) is hard to beat – appie, entrée and a dessert; Full sized portions where quality and flavor are not discounted! Come between 11:30am – 2:30pm… Also between 5:00 – 7:00pm they have a lounge / patio small plate menu for $9 items plus $5 craft beer… Happy Hour anyone?
There seems to be a lot of fuss on the internet ranting on the below par services and the “unbelievably inattentive and very slow” services received. I must say I’ve been here several times and never had a problem – the servers were prompt, attentive and friendly… servers were well attuned to wine recommendations and food pairing.
Come late at night to enjoy the bar / lounge experience (closing at 1am Thurs – Sat; otherwise at 12 midnight). A lot of people actually have the wrong impression that The Market is extremely pricey but it is actually no different than say your local Joey’s or Cactus. Cocktail and Wine lists are reasonably priced – $11-15 / glass; domestic beer @ $8; International @$9; and if you are still hungry or want something to munch on… the Bar Menu ranges between $10-20 bucks. Heck where else am I going to find Dungeness Crab Cake (with absolutely no filler) and Oysters on the Half Shell at midnight $24/dozen?
I am sad to report that they are no longer offering their seasonal Cheesecake *cries*. I’m not sure why, and have not have a chance to find out why either. However, I often came back just for the smooth creamy velvety cake served with seasonal fruits – sometimes strawberries, fig, etc. Fig was by far, hands down, the best! Oh how I miss thee…. but apparently there is a nice substitute Raspberry Cheesecake Sundae!
Also notable is their Warm Chocolate Cake…
A classic chocolate molten lava cake for your die-hard coco fans. Please order your own, this is not sharable (or you won’t want to share because it is simply irresistible). This is a rich centered dessert but it does not come off too sweet as the cake itself is still light in texture. Pair with vanilla bean ice cream!
Right now they are also offering a tasting menu for $75.
