In a Snap!: Tasty Southern Recipes’ – Red Pepper Cheese Dip

We were recently sent a few Southern cookbooks from the good folks at OMG Publicity. In a Snap!: Tasty Southern Recipes You Can Make in 5, 10, 15, or 30 Minutes by Tammy Algood author of Farm Fresh Southern Cooking. I love the fact that it is aimed for meals under half hour. In fact, most recipes can be made in 5, 10, 15, or 30 minutes as the title suggests. Ingredients for the recipes are affordable unlike the Thomas Keller – The French Laundry Cookbook that we so often drool over and holds a permanent spot on our coffee table.  The pictures in the book also includes some colorful photos and is sectioned and color coded. It is great for people like me with OCD.

Cookbook - In a Snap

 

 

Red Pepper Cheese Dip
Yields: 1.5 cups

Ingredients:
1 package (8 ounce) cream cheese
1 tbsp milk or half/half
1/2 cup chopped, roasted, sweet red bell peppers
1/2 cup crumbled feta cheese

 

  1. Place cream cheese in a glass bowl and microwave on high power for 20 seconds to soften.
  2. Add milk, bell peppers, and feta cheese.
  3. Microwave for 20 – 30 seconds longer and stir to blend.
  4. Serve asap.
  5. Storage Note: Store leftover in the refrigerator and consume within 5 days.
