Chachi’s is one of the newest sandwich fare at Metropolis at Metrotown in Burnaby. Chachi was founded by Derek Brock and Jason Cunnigham – founders of Jugo Juice back in 1998. After selling it’s stakes to Quebec based MTY Food Group, the duo decided to focus all their attention on Chachi’s Sandwich Bar in 2007. Franchises opened across Calgary. Metrotown is their first location in BC.
Chachi’s offers a selection of sandwiches on ciabatta bread between $10 to $12, breakfast sandwiches, Mac n’ Cheese, salads and sides like chips, pickles and pepperoni.
Mac n’ Cheese: Comes in two different flavors (regular and spicy with Capicollo). The mac n’ cheese is very cheesy and smooth. I particularly enjoyed the subtle heat of the spicy mac n’ cheese with capicollo. This was one of my favorite items on the menu.
Hot Philly Sandwich: Rib steak with bell peppers, onions, jalapeno, garlic aioli, spicy mayo and provolone cheese. I like the rich, hearty flavors of the beef steak with the kick of jalapeno.
Breaky Sandwiches 4.50: Ham and Cheese on an English muffin much like McDonald’s but slightly less greasy.
Clubbin’ Sandwich: BTL sandwich with bacon, turkey, lettuce, tomato, cheddar, garlic aioli, and spicy mayo. It is a good simple sandwich if you are not looking for something fancy.
Banh Mi: Beef brisket, asian marinade, pickled carrots, cilantro, jalapeno and garlic aioli. I was not a fan of this sandwich since the beef brisket was too saucey and overly sweet. There is not enough pickled carrots to keep the sandwich light and fresh. Skip this and go to a real Vietnamese restaurant if you craving a real Banh Mi.
Pork with Mac: Tender pulled pork, sweet chili BBQ sauce topped with mac n’ cheese. This rich sandwich has a good mix of mac and pulled pork. If you are looking for comfort and a filling meal, this one’s a winner!

Panago Pizza recently released six brand new pizza flavours and we were called to host a party. A pizza party! Of course we would! Watching sports with friends is always a good idea. Especially with the excitement of Toronto Blue Jays in the ALCS (American League Championship Series) playoffs going strong and the beginning of the NHL season with Vancouver Canucks. It’s hard not be excited and/or to jump on the bandwagon (even if you are not already a die hard fan!)

BBQ Chicken: tomato based barbeque sauce, topped with grilled chicken, bacon, caramelized onions, red peppers, mozzarella and cheddar cheese. Multi-grain thin crust.
Veggie Med: passata tomato sauce, topped with fire roasted chicken, kalamata olives, red peppers, baby spinach leaves, red onions, feta and mozzarella cheese. Italian thin crust.
Chipotle Chicken: creamy chipotle cilantro sauce, grilled chicken, roasted corn medley seasoned with onion, red and green peppers with mozzarella cheese. Regular hand tossed crust.
Deluxe Tropical Hawaiian: smooth, tangy sweet barbeque sauce with notes of clove and oregano, topped with bacon, extra Canadian ham, extra pineapples, mozzarella and cheddar cheese. Multi-grain crust.
Chicken Club: creamy ranch style sauce with a jalapeno pepper kick, grilled chicken, Canadian ham, bacon, tomatoes and mozzarella cheese. Regular hand tossed crust.
The Steak Mushroom Melt: cheezy cheddar sauce, topped with steak, bacon, sauteed mushrooms, mozzarella and cheddar cheese. Regular hand tossed crust.
Almost unanimously we all thought Veggie Med stood out with the sunny vibrate flavours, the sharp flavours of olives. We could imagine being on a patio in Santorini. Coming in close seconds were both the Deluxe Tropical Hawaiian (we love the extra pineapples and cheese!); and the deep earthy flavours of the Steak Mushroom Melt!
I like house parties. I how we can just stay home, relax, and have fun. During intermission, we played beer pong! It’s always fun to challenge each other. All fun and giggles! And maybe some trash talking too (I won’t lie!)

Minute Rice held a cooking event with Chef John Higgins, Director of Toronto-based George Brown Chef School. Chef Higgins is one of Canada’s leading chef school and one of the top culinary schools in North America, calls instant rice “one of the simplest go-to ingredients that can be used to quickly and easily whip up creative, family-friendly meals – even desserts.”
Working with Minute Rice® 100% Natural Instant Rice, for example, Chef Higgins helped create a wholesome, all-natural and easy “Veggie Rice Lasagna Loaf” dish that takes only 10 minutes to prepare for the oven (see recipe below). “When time is an issue, instant rice is an excellent solution for busy moms and people in a rush,” said Chef Higgins, who is also a judge on the Food Network’s Chopped Canada and former personal chef for the Queen Mother.
Veggie Rice Lasagna Loaf Recipe by Chef John Higgins
Prep Time: 10 min
Cook Time: 20 min
2 cups (500 ml) Minute Rice® Instant Premium Long Grain White Rice
1/4 cup (60 ml) grated Parmesan cheese, good quality, if possible
2 tbsp (30 ml) olive oil
2 bunches green onions, chopped
1 pkg (10 oz/300 g) frozen chopped spinach, thawed and squeezed well to remove liquid
2 cloves (5 g) garlic, minced
1 1/2 cups (375 ml) light ricotta or cottage cheese
1 cup (200 g) zucchini, sliced
1 jar (24 oz/700 ml) prepared marinara or home-made pasta sauce
2 cups (500 ml) shredded low fat Mozzarella cheese
2 (145g) tomatoes, sliced
1. Preheat oven to 350°F (180°C). Prepare rice according to package
directions. Stir in the parmesan cheese and reserve. Here are Top 10 Rice Cooking Tips.
2. Place 15 ml of the olive oil in a warm pan, then add the chopped green onions, followed by the spinach, and season with garlic. Cook for one minute. Add salt and pepper, then
allow to cool. Mix with ricotta cheese until combined.
3. Place the rest of the olive oil in a non-stick pan. Add the sliced zucchini. Cook for 10 seconds on each side. Season to taste. Remove from the pan and place on a paper towel to absorb the oil and allow to cool.
4. Spoon ¼ cup (60 ml) of the marinara sauce into a greased 8-inch (2L) square baking dish. Gently press half of the rice into the baking dish in an even layer; sprinkle with ½ cup (125 ml) mozzarella cheese. Spread half of the spinach mixture over the cheese.
5. Top with half of the tomato and zucchini slices, overlapping as needed. Spoon half of the remaining marinara sauce over the slices. Repeat the layers, ending with the sauce.
6. Sprinkle evenly with the remaining cheese and bake for 20 minutes or until bubbly and golden on top. Let stand for 5 minutes before slicing.
Per serving (1/6 of recipe): 430 calories, 18g fat, 40mg cholesterol, 770mg sodium, 45g carbohydrate, 5g fibre, 9g sugars, 23g protein

The Lakeside Cafe is located on the second floor to the Harrison Hot Springs Resort and Spa Hotel. The upside of this cafe is that it is inside the hotel with hot coffee. Miss Margaret’s downstairs brews fresh Starbucks coffee. At first glance there was a good selection of pastries, breads, hot plates, fruits and cereals. A closer look, most items were not restocked and the cafeteria is severely dated with 1980’s screaming for their napkins back.
A closer inspection, our cereal was stale and the milk and juice were left exposed on the side next to the cereal bar. Sorry, not a fan.
The best part of The Lakeside Cafe is their omelette station. No wonder there was a 20 person line up at all times. Can’t complain about fresh sunny side up eggs.
