Red Bean Soup Instant Pot 蓮子百合紅豆沙

Adzuki Red Bean Soup 紅豆沙 / 紅豆湯 is delicious creamy and hearty Chinese dessert that is can be easily made with a Instant Pot pressure cooker. This sweet soup is nourishing, immune boosting and helps removes dampness! Enjoy it hot or cold. No soaking required!

Red bean soup a classic Cantonese dessert soup. It is commonly served at the end of meals in most Chinese restaurants. It is one of those dishes that encompasses nostalgia and childhood memories. There are many variations of this red bean soup: some people like to add green mung beans, lotus seeds, lily bulbs, black glutinous rice, etc. But the basic red bean soup base is consistently made with red beans, rock sugar and Chinese mandarin peel.

Let’s Get Fancy

If you want to get fancy, you can also add tofu pudding, sago or sesame soup. All these variations are typical of iconic dessert soup shops in Hong Kong.

Instant Pot Red Bean Soup

Making red bean soup is super easy and can be done without soaking! It takes only a few ingredients that you can store in the pantry. Using an Instant Pot cuts the cooking time by half! Pressure cook on High Pressure for 45 minutes and let it naturally release pressure (this will add approximately 20 minutes.) Afterwards, I like to emulsify my red bean soup by bringing the soup to a boil using the “Soup Mode” – I find this brings out the nutty flavours of legumes better!

HEALTH BENEFITS OF CHINESE HERBS

紅豆 Red Beans / Adzuki – Antioxidant and improves cardiovascular health. Protein dense and low in fat. High levels of potassium, fibre, vitamin Bs, iron and zinc. In Traditional Chinese Medicine, red beans removes dampness, promotes calmness, restores the mind and regulates spleen and kidney functions. 红豆清心养神、健脾益肾功效.

蓮子 Lotus Seed / Semen Nelumbinis Nuciferae – Dried lotus seeds are sweet and promote spleen, kidney and heart. Those suffering from insomnia will find comfort in its ‘de-heating’ properties. Lotus seeds also reduce hemorrhaging.

蓮子去熱,蓮子心性寒。 蓮子調理脾胃,促進消化有幫助,治療失眠等功效

百合 Lily Bulbs / Lilium lancifolium – Lily bulbs’ nature is cold and helps lower heat, relieve coughs, dry throats and other respiratory conditions like chronic bronchitis, asthma, etc. Its properties treat restlessness and irritability and promote restful sleep.

百合解毒、理脾健胃、利湿消积、宁心安神、促进血液循环等功效。

陳皮 Dried Chinese Mandarin Peel: Aged tangerine peel is soothing and normalizes your meridians. It helps relieves cold and reduces phlegm, congestions and stagnation of Qi. It improves digestion, reduces dampness and promotes spleen functions. Choose dried Chinese mandarin peels that are well aged.

温经通络、散寒化痰、 理气健脾,燥湿化痰,治咳嗽。對於一些咳嗽痰多、噁心、腹脹或者是食慾不振的患者俱有很好的作用。

Stovetop Method

If you do not have an Instant Pot or you prefer the stovetop method, you will need to pre-soak the red beans, lotus seeds, and lily bulbs. Soaking the red beans will make your sweet soup become extra “sandy / grainy”. A good red bean soup will have a nice grainy texture!

Boil your ingredients plus 10 cups of water on medium heat for 2 hours then boil for 30 mins on high heat.

For stovetop method, I like using cast iron pots like Le Creuset or Staub to maintain balanced circulated heat and reduce moisture loss.

Pro Tip: Use a spoon and scrape the white part off from the Chinese mandarin peel and remove the stem. Doing this eliminates traces of bitterness.

蓮子百合紅豆沙屬於粵菜系一道美味可口的名點。紅豆有清心養神、健脾益腎功效。加入蓮子、百合更有固精益氣、寧心安神、促進血液循環、治療失眠、能治肺燥,乾咳,等功效。

先洗乾淨紅豆,蓮子,百合,

紅豆清水泡浸兩小時 (有時間浸過夜仲好)

蓮子和百合浸洗 20 分鐘 (蓮子去芯;蓮子心性寒)

陳皮浸軟刮囊備用

煮開水,把紅豆,陳皮,蓮子,百合放入鍋中;

溫馨提示: 陳皮要凍水落,唔係會有苦味

煮滾後用中慢火煲兩小時,最後才用大火煲大概半小時至豆腍

如果你使用 Instant Pot 壓力鍋,請設置為高壓煮滾 45分鐘

煲至紅豆起沙和還有適量水份,就可以加糖調味,甜度根據各人所愛

蓮子百合紅豆沙屬於粵菜系一道美味可口的名點。紅豆有清心養神、健脾益腎功效。加入蓮子、百合更有固精益氣、寧心安神、促進血液循環、治療失眠、能治肺燥,乾咳,等功效。


Scale

Ingredients

  • 2 cups adzuki red beans 紅豆
  • 1/4 cup dried lotus seeds 白蓮子 (1两 or 37.5g)
  • 1/4 cup dried lily bulbs 白合 (1两 or 37.5g)
  • 50g rock sugar 冰糖 (適量)
  • 2g dried Chinese mandarin peel 果皮(1 塊)
  • dash of kosher salt (適量)
  • 6 cups cold water

Instructions

  1. Wash dry ingredients in the cold and soak for 20 minutes to remove any traces of impurities. (see notes)
  2. Use a spoon and scrape the white part off from the Chinese mandarin peel and remove the stem. Doing this eliminates traces of bitterness.

 

Pressure Cook Red Bean Soup:

  1. Add all the ingredients in the Instant Pot
  2. Add 6 cups of cold water in the Instant Pot.
  3. Set Pressure Cooker at High Pressure for 45 mins and let it naturally release.
  4. Set Instant Pot to “Soup Mode” and bring the red bean soup to a boil for 15 minutes, stirring occasionally. Emulsify to desired viscosity. (see notes)
  5. Taste and add more rock sugar or pure cane sugar if desired near the end. 
  6. Serve and enjoy hot or cold.
  7. You can also add coconut milk for a different experience!

Notes

  • Wash and rinse the Chinese herbs. I recommend soaking the herbs in water for at least 20 mins to remove any sulphur used during the sulphur fumigation process (replacing traditional sun-drying for its pesticidal and anti-bacterial properties.) Just in case.
  • If your soup becomes too thick, add in boiled hot water and continue cooking to thin it out.
  • Red bean soup thickens more after chilled in the refrigerator.
  • Enjoy this sweet dessert, either hot or cold. 
  • Stove Top Method use 10 cups of water and boil for 2 hours (see post for more info)

  • I like red bean soup but often found that the ones in restaurants are too sweet. Maybe I should make my own. Hopefully I won’t get stuck with eating all of it since my family is used to ice cream and cakes for dessert, hah.

  • I’ve always had a mixed relationship with red bean soup – it often seems to be either too sweet, not sweet enough, or lacking in the other ingredients that balance things out. I’m personally fond of really being able to taste the orange peel, for example, and you often don’t get that in restaurants. I don’t know why I’d never thought of making it myself, but this is delightfully easy, and perfect for tweaking to personal tastes! Cheers, and thanks for posting!

    • Hi Sean! absolutely. Everyone makes it a little different and often restaurants skim out on key ingredients are done in such large batches / keep overnight. Making it yourself is simple and economical and you can tweak your ratios anyway you like! I hope you make the perfect batch . can’t wait to see it!
