This 3 Ingredient Blueberry Banana Pancake recipe is the perfect healthy breakfast to use up overripe bananas. Kids approve of these yummy, treat-tasting, fluffy pancakes! Ingredients

  • 1 ripe banana
  • 2 eggs
  • 1/2 cup BC Frozen Blueberries

Instructions

  1. Mash a large banana in a large mixing bowl.
  2. Add the eggs to the banana mixture. Feel free to fold in rolls oats or chia seeds if you are looking to bulk up this 3-ingredient vegan pancake some more.
  3. Add vegetable oil to a nonstick skillet over medium heat. For best results, ensure the heat isn't too high so the pancakes will burn.
  4. Add the pancake batter and blueberries to the non-stick skillet and cook for 2 minutes or until golden brown. Flipping halfway. Repeat with the remaining batter.

  6. Serve and enjoy with your favourite pancake toppings like fresh blueberries!
