Chinese Deviled Eggs with Pork Floss and Nori Seaweed

Chinese Deviled Eggs with Pork Floss and Nori is the perfect fusion twist of the classic deviled eggs recipe with a combination of a few simple ingredients bursting with umami flavours. The base is made with a smokey hard-boiled Chinese Tea Leaf Eggs and upgraded with kewpie mayo, pork floss, nori flakes and paprika for an extra pop of heat.

Why Are Deviled Eggs Called Deviled Eggs?

Classic deviled eggs are the perfect healthy snack for the holidays, potlucks and gathering parties. But “why are deviled eggs called deviled eggs?

According to Google, the term “deviled,” about food, was in use in the 18th century, with the first known print reference appearing in 1786. In the 19th century, it came to be used most often with spicy or zesty food, including eggs prepared with mustard, pepper or other ingredients stuffed in the yolk cavity.

How to Make Deviled Eggs

Deviled eggs are easy to make and simply requires cooking a few hard-boiled eggs. But the best deviled eggs are perfectly cooked hard-boiled eggs without the chalky green rim around the yolk.


Let’s talk about…

How to cook perfect hard-boiled eggs every time!

  1. Bring a pot of water to a boil first.
  2. Ensure there is enough water to cover the eggs by about an inch.
  3. Place the eggs into the pot gently with a skimmer.
  4. Set a timer immediately and cook the eggs to your desired doneness.
  • 6 minutes 50 seconds: perfect soft-boiled egg with an unctuous texture
  • 8 minutes: soft yolk with firm white
  • 10 minutes: soft-centred hard-boiled eggs
  • 13 minutes: the ideal hard hard-boiled egg without the chalky green rim around the yolk! Anything beyond 14 minutes would be considered overcooked.

While the eggs are cooking, fill a large bowl with ice and cold water.
Transfer the eggs to the ice bath to cool asap. Placing the eggs in an ice-water bath will stop them from cooking and maintain your perfect egg texture!

Marinate the Eggs

Once the eggs are cooled, lightly crack the eggshells by tapping it with the back of a spoon. Be careful, and don’t fully break the shell. You simply want the eggshells slightly cracked to let the marinade seep through to infuse and marble the eggs.

The Chinese Tea Leaf Eggs Base has a beautiful marbled surface. It is rich in umami flavours after bathing in a savoury marinade consisting of light and dark soy sauce, star anise, cinnamon, Sichuan peppercorns, shaoxing wine and obviously, black tea leaves.

Once your eggs have marinated overnight in the refrigerator – longer for two to three days if you prefer a thicker egg yolk. The eggs will become more flavourful and saltier over time.

Assembling Deviled Eggs

Remove the yolk to a small bowl with a spoon and place the egg whites on a plate.

Mash the yolks with a folk and add in kewpie mayonnaise, smoked paprika, salt and pepper. Mix everything together until smooth.

Use a spoon or a piping bag to add a portion of the deviled egg yolk mixture back into the hold of each egg white. You can use a ziplock bag instead of a piping bag. Simply cut a small hole at the corner and use that as a tip.

Dust smoked paprika for garnish, add on shredded pork floss, and sprinkle with nori komi furikake seasoning on top.

Serve these tiny umami flavour bombs to your guests!

Deviled Eggs

 


Instructions

Bring the eggs to room temperature by leaving them out of the refrigerator for 20 mins.

 

Preparing the Marinade

  1. In a small pot, add all the ingredients except the eggs. Bring the mixture to a boil and then reduce to low-medium heat and simmer for 10 minutes.
  2. Once done, remove and discard the tea bags. 
  3. Set aside and let cool completely.

 

 

Cooking Perfect Hard-Boiled Eggs (Stovetop Method)

  1. Boil a large pot of water. 
  2. Carefully place the eggs into the boiling water and cook for exactly 13 minutes. Stirring slowly to distribute heat evenly for the first minute.
  3. While the eggs are cooking, fill a large bowl with ice and cold water.
  4. Transfer the eggs to the ice bath to cool.

 

Marinating the Eggs

  1. Once the eggs are cool, gently crack the eggs by tapping the shell with the back of a spoon. 
  2. Make sure the eggs shells are cracked enough so the marinade can seep into inside and marble the eggs. You can also opt to peel the eggs and marinate the eggs without any shells; however, this will not create the “marbled” effect. 
  3. Place the cracked eggs into a container, then pour the marinade in until the eggs are completely submerged.
  4. Marinate overnight for 24 hours in the refrigerator. Marinate longer for two to three days if you prefer a thicker egg yolk. The eggs will become more flavourful and saltier over time. 

 

Assembling the Deviled Eggs

Assemble the Deviled Eggs the day you plan to enjoy them. Assembly time simply takes approximately 10-15 minutes. So I recommend you prepare these 30 minutes just before you plan on serving them to your happy guests!

  2. Mash the yolks with a folk and add in kewpie mayonnaise, smoked paprika, salt and pepper. Mix everything together until smooth.
  3. Use a spoon or a piping bag to add a portion of the deviled egg yolk mixture back into the hole of each egg white. You can use a ziplock bag instead of a piping bag. Simply cut a small hole at the corner and use that as a tip.
  4. Dust smoked paprika for garnish, add on shredded pork floss, and sprinkle with nori komi furikake seasoning on top.
  5. Serve these tiny umami flavour bombs to your guests!

 

 



Notes

Chinese Tea Leaf Eggs can be made ahead of time. Simply cook the eggs to a perfect hard-boiled instead of a soft-boiled yolk.

Elderflower Vinaigrette is simple to make. Mix organic Elderflower, White wine vinegar, grape seed oil (or any neutral tasting oil), dijon mustard (i prefer the old fashion kind), maple syrup and brown sugar.

Viola! There you have yourself a refreshingly delicious summer salad bursting with juicy ripe peaches, bright feta, nutty pine nuts and fragrant elderflower vinaigrette against the pepper bite of arugula!

Peach Arugula Salad

  • 2 ripe peaches, pitted, cut into wedges
  • 150g baby arugula
  • 1/2 feta cheese, crumbled
  • dash of black pepper to taste
  • dash of sea salt to taste
  • 2 tbsp of Elderflower Vinaigrette
  • 1/4c pine nuts

 

Elderflower Vinaigrette


Instructions

  1. In a small bowl, whisk together all the ingredients for the elderflower vinaigrette. Set aside. See notes.
  2. In a small frying pan, toast the pine nuts over medium heat, tossing often to avoid burning. Toast until golden brown. Remove from heat.
  3. Place the baby arugula in a large salad bowl
  4. Add in fresh peaches, crumbled feta cheese, toasted pine nuts. Toss gently.
  5. Add in elderflower vinaigrette over the salad greens. Toss to coat.
  6. Add more feta cheese and dressing if desired.
  7. Serve immediately and enjoy!


Notes

  1. Elderflower vinaigrette can be stored in the refrigerator up to a week.

Smoked Salmon cream cheese Sprouts Sandwich

Smoked salmon is such a treat and I love adding it to my salads and sandwiches! The salmon fish has a high-fat content and is a good source of omega-3 fatty acids!

I love the little smoked salmon tea sandwiches during afternoon teas but often find them gone too fast! The cream cheese dill spread complements the salmon perfectly! So I decided to make it into a full-size sandwich!

You can make this sandwich in just 5 minutes!

Do you like to enjoy your sandwiches open-face or stacked?

Here’s What You Will Need

  • 4 slices of thick cut bread
  • 6 oz sliced smoked salmon
  • 6 oz cream cheese, softened at room temperature
  • dash of freshly ground black pepper and salt to taste
  • 2 springs of dill
  • 2 garlic cloves, pressed
  • 2 tbsp capers, drained (optional)
  • 2 oz alfalfa sprouts/radish sprouts (learn how to grow alfalfa sprouts at home HERE)
  • 1/4 cup thinly sliced red onion (optional)

Depending what ingredients I have at home, I often interchange between thinly sliced red onions and alfalfa sprouts. Sometimes I would use a blend of both alfalfa and radish sprouts. I like adding radish sprouts especially because it has a good kick of spice!

OPEN FACE Smoked Salmon cream cheese Sprouts Sandwich

In a small bowl, combine the cream cheese, pressed garlic and freshly chopped dill together. Mix well with a fork.

Spread the cream cheese on top of a slice of toast. Top with smoked salmon, thinly sliced red onions, dash of freshly ground black pepper and salt, homegrown alfalfa and radish sprouts, and garnish with dill and capers.

Top your sandwich with another piece of toast if you want to enjoy it stacked. Slice across the center.

Red bean soup a classic Cantonese dessert soup. It is commonly served at the end of meals in most Chinese restaurants. It is one of those dishes that encompasses nostalgia and childhood memories. There are many variations of this red bean soup: some people like to add green mung beans, lotus seeds, lily bulbs, black glutinous rice, etc. But the basic red bean soup base is consistently made with red beans, rock sugar and Chinese mandarin peel.

Let’s Get Fancy

If you want to get fancy, you can also add tofu pudding, sago or sesame soup. All these variations are typical of iconic dessert soup shops in Hong Kong.

Instant Pot Red Bean Soup

Making red bean soup is super easy and can be done without soaking! It takes only a few ingredients that you can store in the pantry. Using an Instant Pot cuts the cooking time by half! Pressure cook on High Pressure for 45 minutes and let it naturally release pressure (this will add approximately 20 minutes.) Afterwards, I like to emulsify my red bean soup by bringing the soup to a boil using the “Soup Mode” – I find this brings out the nutty flavours of legumes better!

蓮子 Lotus Seed / Semen Nelumbinis Nuciferae – Dried lotus seeds are sweet and promote spleen, kidney and heart. Those suffering from insomnia will find comfort in its ‘de-heating’ properties. Lotus seeds also reduce hemorrhaging.

百合 Lily Bulbs / Lilium lancifolium – Lily bulbs’ nature is cold and helps lower heat, relieve coughs, dry throats and other respiratory conditions like chronic bronchitis, asthma, etc. Its properties treat restlessness and irritability and promote restful sleep.

百合解毒、理脾健胃、利湿消积、宁心安神、促进血液循环等功效。

陳皮 Dried Chinese Mandarin Peel: Aged tangerine peel is soothing and normalizes your meridians. It helps relieves cold and reduces phlegm, congestions and stagnation of Qi. It improves digestion, reduces dampness and promotes spleen functions. Choose dried Chinese mandarin peels that are well aged.

温经通络、散寒化痰、 理气健脾,燥湿化痰,治咳嗽。對於一些咳嗽痰多、噁心、腹脹或者是食慾不振的患者俱有很好的作用。

Stovetop Method

If you do not have an Instant Pot or you prefer the stovetop method, you will need to pre-soak the red beans, lotus seeds, and lily bulbs. Soaking the red beans will make your sweet soup become extra “sandy / grainy”. A good red bean soup will have a nice grainy texture!

Boil your ingredients plus 10 cups of water on medium heat for 2 hours then boil for 30 mins on high heat.

For stovetop method, I like using cast iron pots like Le Creuset or Staub to maintain balanced circulated heat and reduce moisture loss.

Pro Tip: Use a spoon and scrape the white part off from the Chinese mandarin peel and remove the stem. Doing this eliminates traces of bitterness.

煮滾後用中慢火煲兩小時,最後才用大火煲大概半小時至豆腍

如果你使用 Instant Pot 壓力鍋,請設置為高壓煮滾 45分鐘

煲至紅豆起沙和還有適量水份,就可以加糖調味,甜度根據各人所愛

Description

Adzuki Red Bean Soup 紅豆沙 / 紅豆湯 is delicious creamy and hearty Chinese dessert that is can be easily made with a Instant Pot pressure cooker. This sweet soup is nourishing, immune boosting and helps removes dampness! Enjoy it hot or cold. No soaking required!

Ingredients

  • 2 cups adzuki red beans 紅豆
  • 1/4 cup dried lotus seeds 白蓮子 (1两 or 37.5g)
  • 1/4 cup dried lily bulbs 白合 (1两 or 37.5g)
  • 50g rock sugar 冰糖 (適量)
  • 2g dried Chinese mandarin peel 果皮(1 塊)
  • dash of kosher salt (適量)
  • 6 cups cold water

Instructions

  1. Wash dry ingredients in the cold and soak for 20 minutes to remove any traces of impurities. (see notes)
  2. Use a spoon and scrape the white part off from the Chinese mandarin peel and remove the stem. Doing this eliminates traces of bitterness.

 

Pressure Cook Red Bean Soup:

  1. Add all the ingredients in the Instant Pot
  2. Add 6 cups of cold water in the Instant Pot.
  3. Set Pressure Cooker at High Pressure for 45 mins and let it naturally release.
  4. Set Instant Pot to “Soup Mode” and bring the red bean soup to a boil for 15 minutes, stirring occasionally. Emulsify to desired viscosity. (see notes)
  5. Taste and add more rock sugar or pure cane sugar if desired near the end. 
  6. Serve and enjoy hot or cold.
  7. You can also add coconut milk for a different experience!

Notes

  • Wash and rinse the Chinese herbs. I recommend soaking the herbs in water for at least 20 mins to remove any sulphur used during the sulphur fumigation process (replacing traditional sun-drying for its pesticidal and anti-bacterial properties.) Just in case.
  • If your soup becomes too thick, add in boiled hot water and continue cooking to thin it out.
  • Red bean soup thickens more after chilled in the refrigerator.
  • Enjoy this sweet dessert, either hot or cold. 
  • Stove Top Method use 10 cups of water and boil for 2 hours (see post for more info)

Mission Hill Winery Estate located heart of British Columbia’s breathtaking Okanagan Valley wine country is must for anyone visiting Kelowna for the first time. This trip was one that I will always remember and hold dear to my heart. The breathtaking scenery provides a great place for you to take refuge from the busyness of daily life and escape for while with a delicious glass (or bottle, we don’t judge) of wine. We came here on our second day of our Summerland road trip. In the end, guests will enjoy an extensive tasting of 4 award-winning wines and a $5.00 gift voucher for our Wine Shop.

There are many guests whom thinks it is free and communal and start reaching into your purchased food. Most are probably already intoxicated from the wine tour and wine tasting where common sense and mannerism is throw out the door.
