See Ya Later Ranch Winery Tour located in Okanagan Falls, Osoyoos, British Columbia is one of the best winery in BC. This October 2014, it won the most prestigious wine award in British Columbia – taking home the Premier’s Wine Award. See Ya Later’s 2012 Rover Shiraz-Viognier took honors out of 540 entries at the British Columbia Wine Awards. Our trip to See Ya Later Ranch vineyard was very enjoyable. We loved that they are a dog friendly winery and also because of the bittersweet romance tale of The Major and his wife. Long story short, Major moved to Okanagan Valley in 1919 to build a ranch and his wife from London said “see ya later”. Dogs became his friends and he later named his wines after his dogs.

The See Ya Later Ranch wine tour started from inside where we tasted the sparkling Brut. See Ya Later Brut notes crisp orchard fruit with a lively acidity for a refreshing palate. I loved the citrus flavors and hints of cream.

Next stop, we walked around the back where we soaked in the view high from the mountains.  British Columbia is so beautiful. Often times I take this place for granted and there is so much to explore – right in my own backyard! Our tour guide was very knowledgeable and patient. It was lovely learning about the different grapes, the history of the Okanagan Valley.

See Ya Later Gewurztraminer White Wine: This is one of the best overall Okanagan vintages with excellent flavor without being too sweet. Gewurz is one of my favorite white wines because it has a spicy aroma of lychee fruit, rose, melon and pink grapefruit. Crisp and dry.

Mission Hill Winery Estate located heart of British Columbia’s breathtaking Okanagan Valley wine country is must for anyone visiting Kelowna for the first time. This trip was one that I will always remember and hold dear to my heart. The breathtaking scenery provides a great place for you to take refuge from the busyness of daily life and escape for while with a delicious glass (or bottle, we don’t judge) of wine. We came here on our second day of our Summerland road trip. After travelling from Vancouver and pre-drinking before at Sumac Ridge Estate Winery, we didn’t want to leave this beautiful place. We made sure we made dinner reservations at the Mission Hill Terrace Restaurant for dinner later that evening.

Haddock Scallops Fennel Soup 

I love making this seafood fennel cioppino soup! It is so easy to make and can be made the night before if you are hosting a dinner party. The soup holds up well over time. This is the perfect comfort soup to stay cozy – even in the summer! The aroma of onion, fennel and garlic along with the sharp, sweet liquorice flavour of fennel pairs wonderfully with meaty MSC Certified scallops and flakey, tender MSC Certified Haddock.

We use Nobilo Sauvignon Blanc to deglaze the pan after the white Miropoix is translucent and bacon is cooked. Remember to scrape off the fat rendered from the bacon. One of the secrets of cooking wine is that wine helps cook and add flavour to fish and to replace the lost moisture.

I like to play off the subtle flavours in the wine and acid can help bring out the natural flavours in mild food, such as fish – ex. fish is often served with a wedge of lemon! Also, when deciding what type of wine you should be used to cook which type of food, the general rule is to pair light-flavoured wine with delicately flavoured ingredients.

Ingredients

  • 78 Scallops MSC Certified
  • 4 filets Haddock MSC Certified
  • 68 Cold Water Shrimp MSC Certified (optional)
  • 2 slices of Hickory smoked bacon
  • 1 large fennel bulb (cored, cut lengthwise into 1/2 inch long matchsticks)
  • 1 cup white onion (chopped)
  • 1 stalk celery (chopped)
  • 2 shallots (chopped)
  • 1 ear corn (remove kernels off the cob, frozen corn is ok too)
  • 1 cup fish stock
  • 1/2 cup white wine (we usedNobilo Sauvignon Blanc)
  • pinch of dried chili flakes
  • dash of salt and pepper to taste
  • 2 cloves garlic (smashed)
  • 1 sprig dill for garnish
  • 1 tbsp extra virgin olive oil

Instructions

  1. Heat a large sauce pan over medium-high. Add olive oil.
  2. Once the olive oil is hot, add bacon, white Mirepoix (onions, fennel, celery), shallots and garlic.
  3. Reduce temperature to low heat, stirring occasionally and cook until fragrant and translucent.
  4. Deglaze the pan with white wine and scrape of fat rendered from the bacon.
  5. After the wine has been cooked down (approximately 5 mins), add in fish stock.
  6. Cover the pan and bring to a boil.
  7. Add MSC Certified Haddock. Cook for 5 minutes until the fish exhibits a flakey consistency.
  8. Add MSC Certified Cold Water Shrimp (optional.) Cook for 2 minutes.
  9. Heat a separate non-stick pan over high. Add oil and once you see smoke, place MSC Certified Scallops on pan. Cook the scallops until browned and crusty. Flip the scallops and repeat. It should take no more than approximately 1-2 minutes.
  10. Divide soup and serve. Arrange the Haddock and Scallops in the centre of each soup plate. Pour hot broth around the fish and scallop.
  11. Garnish with dill.

Notes

  • To achieve a clear soup consistency, strain soup using fine mesh strainer.
  • For presentation, pour the soup around the nicely arranged fish and scallops

Wine and Chocolate: The Perfect Pair this Valentine’s Day

With Valentine’s Day quickly approaching, it’s time to pair up the most savoury tastes and enjoy the occasion with loved ones.

 

Chocolate and wine are two bold tastes that complement each other exceptionally well, especially when paired based on flavour and body. The sweeter a wine is, the sweeter the paired chocolate should be, which is the same for higher cocoa content in chocolate and stronger, red wines.

 

“There are so many ways to pair wine and chocolate, and often times most pairings will taste great, but finding a wine that complements your favourite chocolate well will give you that wow factor,” says Gillian Minaker, Sommelier at Lakeview Wine Co. “It’s great to experiment with pairings but following the general rule of pairing sweeter chocolate with sweeter wine is the best way to find that perfect match.”

 

Throughout the month of February, oenophiles and sweet tooths alike can come together to enjoy Days of Wine and Chocolate. Across the Niagara region, wineries will host wine and dessert pairings every weekend for passholders to taste and enjoy. More than 20 VQA wines will be offered throughout the month and paired with chocolatey dishes.

 

“As the event takes place throughout February, passholders have many opportunities to try out each winery and discover some really exciting taste pairings,” says Gillian Minaker, Sommelier at Lakeview Wine Co. “All participating wineries have something special for every guest, so it really is an event that you don’t want to miss.”

 

Each winery will offer a unique wine and dessert pairing, allowing guests to experience a variety of great tastes. Lakeview Wine Co. will offer a Red Wine Float- 2016 FRESH Perspectives Satin Red mixed with FRESH Ideas Sparkling Riesling topped with a scoop of dark chocolate-cherry ice cream (V).

 

To enjoy the most complimentary wine and chocolate pairing, its beneficial to know which combinations will result in the perfect taste. Heavier wines will often pair well with heavier chocolate such as dark chocolate or milk chocolate. Lighter bodied wines including most whites and Icewine will pair well with white chocolate, and even milk chocolate.
